Allergies and Disney

 Traveling with food allergies can be a challenge and depending on how many it can feel impossible. My daughters allergies can make things difficult at certain places.  If she has an allergen her day is over.  However we have been frequent visitors to Walt Disney World and have not had any issues.  WDW has recently taken things a step further. 
On a recent visit to WDW I was so impressed.  We went to Yak and Yeti for the first time  at Animal Kingdom.  After looking at the menu my daughter and I both decided we wanted the ahi tuna salad.  So our waiter went to check an see if any of foods we were ordering had our allergen.  He promptly came back and told us my daughter could eat everything we ordered except the pot stickers.  The salad was huge and my daughter and I started thinking we should have shared one.  
The next day we were back at Animal kingdom, we had a reservation elsewhere, but the kids loved Yak and Yeti so much that they wanted to try the quick service counter.  We asked at the counter about the allergen and they sent out the chef to talk to us.  Wow! at the quick service counter.  The lady behind us jumped in our conversation as she had the same allergy.  We ordered our lunch.  And again had a great meal.  
At many restaurants we don’t ask anymore.  We have been there so many times.  However we ask if we are trying something new or the menu has changed.  However some of the restaurants are now asking if there are any allergies when you check in.  At Tokyo Dinning they asked, waitress confirmed, manager came over to notify of selections to stay away from and said she would check our order and make sure we did not order anything with our allergen.  I was impressed. 
So now that you can feel good about how WDW handles allergies.  I thought I would let you know our favorite restaurants at WDW.   We base our selection purely on the food.  Many restaurants are more of an experience.

  • Sunshine Seasons (EPCOT) quick service
  • Les Chefs De France (EPCOT)

  • La Hacienda De San Angel (EPCOT)
  • Cinderella’s Royal Table (Magic Kingdom)
  • Sci-Fi Drive in (Hollywood Studios) my kids love this for the experience we have gone every trip for the last 10 years.
  • Ohana (Polynesian Resort)
  • 1900 Park Fare (Grand Floridian)
  • Bongos Cuban Cafe (Downtown Disney)
  • House Of Blues (Downtown Disney)
  • Fresh Mediterranean Market (Dolphin Resort) love for breakfast
  • Koussina (Boardwalk)
  • Yachtsman Steakhouse (Yacht Club)

 For a quick treat we never miss grabbing some dole pineapple soft serve at Aloha Isle (magic kingdom).  My love affair with this soft serve started 13 years ago when I was pregnant, now our trip is not complete with a stop.  
Another favorite thing  for our foodie family is to try the many desserts while walking around the world at EPCOT.  In each country they sell a quick sweet.  We love sharing and finding our favorites.  I think when it comes to dessert we all have a different favorite.  It’s unanimous that stopping in Norway is a must.  So make sure to end your next trip to WDW on a sweet note.

Maple & Spice Pumpkin Seeds

Yum! I am really enjoying pumpkin carving this year!!

Seeds from 1 med pumpkin
2 tbsp maple syrup
1 tsp cinnamon
1/2 tsp nutmeg
1 tbsp olive oil

Clean rinse and dry pumpkin seeds. Mix ingredients in separate bowl. Add seeds and completely coat all seeds. Preheat oven to 300 degrees. Line baking sheet with foil and spray with oil. Spread pumpkin seeds out evenly on foil and bake until crispy about 45 mins. Enjoy your sweet treat!!

Super Easy Blueberry Muffins

I love to make things that are easy when the kids are home so I can spend more time with them.  This is just the recipe.

1 package preservative free blueberry muffin mix
2/3 cups of water
1/2 cup of Ricotta cheese
2 eggs

Directions: If your mix has canned blueberries.  Put them to the side.  Mix all other ingredients together.  When everything is incorporated fold in blueberries.  Fill your muffin cups 3/4 of the way full. Bake at 350 for 16-18 minutes.  Enjoy your family time.

I love this quick recipe that I don't feel as guilty about. Use your favorite organic or all natural brownie mix 1 cup fruit and vegetable juice  1 tbsp olive oil  Mix ingredients together.  grease an 8x8 pan and bake at 350 for 20 minutes or until toothpick comes out clean.
