Artichoke Tortellini

I love cooking with Wine. I even enjoy wine clubs where you can find out more about wines and try ones you might not otherwise drink. I have read many articles saying that the healthiest women over 40 are women who drink one glass of red wine a day.  Below is one of my favorite recipes with white wine.

1/2 Cup Marinated Artichokes
1 1/2 Tbsp Capers
1 tsp Lemon Zest
2 Cloves Garlic
1/4 cup of white wine ( I used Sauvignon Blanc)
1 1/2 Tbsp Pine Nuts
1/4 cup of oil from the Marinated Artichokes
1/4 Cup Feta cheese
1 package all natural cheese and spinach tortellini by Barilla

Directions; Chop the Artichokes, Crush Garlic and chop, place in a pan.  Add oil and pine nuts saute until pine nuts turn slightly golden.  Reserve feta cheese until the end. Add remaining ingredients warm while you Cook tortellini according to directions.  Drain tortellini and toss with sauce and add Feta.  Enjoy this was a huge hit with friends.

2 slices of mozzarella

Place crostini on a lined baking sheet.  spread a bit of pesto on each crostini.  Next place a small piece of fire roasted tomato. Tear uneven pieces of cheese and place on top.  Broil in oven until just golden and serve.

Valentine Fun

Tomorrow is Valentine's Day.  I am ready, are you?

In the morning I will be up making a special breakfast I don't have time for scratch on school mornings.  However I found some great all natural orange cranberry scones I will shape into hearts and bake up in the morning.  I will prepare some potatoes into shreds for hash brown bake today. I will mix all the ingredients tonight so it is ready to pop in the oven in the morning.  Do a bit of decorating in the kitchen.  Once the kids are in bed I will put our their gifts at their place settings so while they are waiting on their hot scones and hash browns they will be opening their gifts.

Hash Brown bake
1 lb shredded potatoes (organic)
1cup shredded cheddar cheese
8 oz. sour cream
1/4 cup melted butter
1/4 tsp white pepper
5 dashes of hot sauce
Directions:  mix ingredients together.  Spray an 8 inch baking dish with olive oil.  Place ingredients in dish.  Bake in oven for 45-50 minutes.

I have my husbands gift and card already to place out for him.  I love these little holidays.  Small gifts and fun.

I may even make some chocolate strawberries if I can find some organic strawberries today.  I already tried one store but alas they did not have any.  So another great sweet fruit treat is pineapple.

This is so simple but so good.  And really pretty healthy.  Pineapple is a great aid in digestion.

4 cups Cubed Pineapple
4 tablespoons Carmel Sauce

Put a cup of pineapple in each dish.  So you have four servings.  Look for a store bought carmel sauce sometimes you can find an all natural one.  Warm up Sauce and Drizzle one tablespoon over each serving of pineapple.  Serve and Enjoy.

Have a wonderful Valentine's Day!!

Rice! Is it in your pantry?

Uncle Ben's is having a contest right now which is my inspiration for my article on rice.
Ben’s Beginners Cooking Contest you could win $20,000, along with a $50,000 grant

Rice is a huge part of my families meals.  My Husband is from Cuba so rice is his potato.  We use rice as a side or part of a side almost every night.  Rice is always the go to when my kids are not feeling well.  And since my part of the family is Italian I grew up eating rice for breakfast.  My kids are a huge part of our cooking,  They love to be in the kitchen with aprons on and spoons in hand.  In fact my 12 year old is currently telling what her favorite things are with rice.  She listed Rice and Beans (a cuban staple), chunky soups with rice and she mentioned my previous, when she is sick.
Our cuban staple of rice and beans is so easy, full of flavor and the kids get a great source of protein.  Aunt Gladys' Cuban black Beans are super simple.  I steam rice to eat with the beans.
1 can seasoned black beans
1 tsp olive oil
dash of Garlic powder
dash of cumin
salt to taste
Directions; mix ingredients together in a pot and let simmer for 5 minutes.  Serve over rice.

Another favorite around my house is my Confetti Rice.  A colorful inviting dish that the kids can put together themselves.  My 9 year and 12 year olds  love mixing the ingredients, and are always eager to gobble up their creation.  Confetti Rice can be served as a main dish or a side.
1 cup rice
1 can organic tomato sauce
1 pound cooked chicken (antibiotic and hormone free)
1 can organic black beans
1/2 cup organic frozen corn
1 tbsp adobe seasoning (look at the ingredients to make sure it does not have MSG)
Directions: Cube or shred chicken. Do not drain beans.  Mix ingredients together in a bowl.  Pour into a 8x8 glass baking dish.  Bake covered with foil in oven at 325 degrees for 45 min.

When my kids are not feeling well they enjoy simple steamed rice.  Rice is so soothing to an upset stomach.  Rice naturally helps diarrhea and it does not irritate a sore throat.   Colds and flues kill kids appetites, however some steamed rice stirred into some hot chicken broth makes everyone fell better.
Rice is always in stock in my pantry.  I grew up eating rice a little different than my cuban relatives.  My favorite way to eat rice was this simple recipe I enjoyed for breakfast or desert at the end of the day.Take 1/2 a cup of steamed rice in a bowl.  Pour some warm milk over and sprinkle with cinnamon and sugar. Sorry for the lack of measurements, I have never measured only eaten hundreds of times.  This is a great warm treat when you have one that needs a little warm milk to help them sleep.  I hope some of my rice inspired ideas get your family in the kitchen.

Artichoke Chicken

I finally got a picture. My family loved the smell and as soon as I put it on a plate they ate it up.  I only got one bite of the chicken because the kids asked for mine when they finished their portion. They ate so fast they were asking for more before I even made it to the table.  Ok on to the recipe.

1 Can of artichoke bottoms
1 teaspoon adobe seasoning
1/2 teaspoon salt
1/4 cup olive oil
1/2 cup white wine
1/2 teaspoon garlic powder
4 boneless skinless chicken breast

Directions:  cut the artichokes into quarters.  Put olive oil in skillet and place chicken in skillet.  Put in artichokes in skillet.  Pour wine in skillet.  Sprinkle 1/2 adobe, salt, and garlic on chicken.  Cover skillet and cook five minutes on medium heat.  Flip chicken and sprinkle the rest of seasoning on chicken.  Return cover and cook five more minutes.  Uncover and cook additional few minutes until chicken is done and serve over rice.  Enjoy my family did with rave reviews.
