Farmers Market

Yes! I am a huge fan of the farmers market.  I love the friendly venders.  The smell of fresh baked bread,yum!! Over time I have found a couple of farmers I favor over others.  I am a huge fan of the local bakery Ibis, and love the pasta stand Pappardelle's.  Today it was lightly raining and way colder than I dressed for so I tried to make my run fast.  One of the farmers I like had great big boxes of sweet potatoes for $17.    So if you are planing to come over for dinner I hope you like your yams.  The other farmer I like, had the largest spaghetti squash I have ever seen. I bought two, I weighed one it was 7 lbs.  These yellow beauties were $5 each.  I also bought some smaller ones for $1 each.  What a deal they are 1.99 a lb on sale at the local grocery.  I was feeling pretty good when the smell of delicious bread crossed my nose. The reason I came to the farmers market in the cold and rain.  They make a bread that I turn into my families favorite french toast.  I bought two loafs one for entertaining tonight. On my way out I had to grab  some speciality pasta.  My food adventure now complete.  If you have not been to your local farmers market, it's time to check it out.  You will find super fresh food. Maple & Spice Pumpkin Seeds

Yum! I am really enjoying pumpkin carving this year!!

Seeds from 1 med pumpkin
2 tbsp maple syrup
1 tsp cinnamon
1/2 tsp nutmeg
1 tbsp olive oil

Clean rinse and dry pumpkin seeds. Mix ingredients in separate bowl. Add seeds and completely coat all seeds. Preheat oven to 300 degrees. Line baking sheet with foil and spray with oil. Spread pumpkin seeds out evenly on foil and bake until crispy about 45 mins. Enjoy your sweet treat!!

Super Easy Blueberry Muffins

I love to make things that are easy when the kids are home so I can spend more time with them.  This is just the recipe.

1 package preservative free blueberry muffin mix
2/3 cups of water
1/2 cup of Ricotta cheese
2 eggs

Directions: If your mix has canned blueberries.  Put them to the side.  Mix all other ingredients together.  When everything is incorporated fold in blueberries.  Fill your muffin cups 3/4 of the way full. Bake at 350 for 16-18 minutes.  Enjoy your family time.

I love this quick recipe that I don't feel as guilty about. Use your favorite organic or all natural brownie mix 1 cup fruit and vegetable juice  1 tbsp olive oil  Mix ingredients together.  grease an 8x8 pan and bake at 350 for 20 minutes or until toothpick comes out clean.
