Get Dinner To The Table

I am writing this article because people
who know me are always asking me "how do you do it". What they mean is how do I have a hot dinner ready when my kids get home. 

So I decided I will start posting some of my tips and tricks. I am home a lot so I am able to start cooking early. My biggest obsticale is that my round trip to school and back (in the afternoon) can be 1-2 hours. Many of us have an afternoon shuffle. So hopefully some of these ideas will help you. 

I start prepping at in the afternoon. sometimes earlier each day. Planning out what I want to make can sometimes be the hardest. 

Your hard working friends that you need are crockpots. I use more than one often times. Rice cooker.  And timed oven cycle. If I am putting something in the oven I know the timer will turn it off and with the oven door staying shut my food will still be warm when I get home. 

If you work you can definitely put crock pots to good use. And you can prep food  a head of time and have it ready to cook when you walk through the door. I do prep a lot of veggies and have in the skillet in the frig. So it only takes 5 to 10 mins to get that last side done. 

The reason I do this is a a couple of reasons. We try to eat as much fresh and homemade food as possible. The other reason, one kid that if he snacks has lost his appetite for dinner. So our goal is to have dinner when they are hungry, right when they get home.

Maple & Spice Pumpkin Seeds

Yum! I am really enjoying pumpkin carving this year!!

Seeds from 1 med pumpkin
2 tbsp maple syrup
1 tsp cinnamon
1/2 tsp nutmeg
1 tbsp olive oil

Clean rinse and dry pumpkin seeds. Mix ingredients in separate bowl. Add seeds and completely coat all seeds. Preheat oven to 300 degrees. Line baking sheet with foil and spray with oil. Spread pumpkin seeds out evenly on foil and bake until crispy about 45 mins. Enjoy your sweet treat!!

Super Easy Blueberry Muffins

I love to make things that are easy when the kids are home so I can spend more time with them.  This is just the recipe.

1 package preservative free blueberry muffin mix
2/3 cups of water
1/2 cup of Ricotta cheese
2 eggs

Directions: If your mix has canned blueberries.  Put them to the side.  Mix all other ingredients together.  When everything is incorporated fold in blueberries.  Fill your muffin cups 3/4 of the way full. Bake at 350 for 16-18 minutes.  Enjoy your family time.

I love this quick recipe that I don't feel as guilty about. Use your favorite organic or all natural brownie mix 1 cup fruit and vegetable juice  1 tbsp olive oil  Mix ingredients together.  grease an 8x8 pan and bake at 350 for 20 minutes or until toothpick comes out clean.
