Mozzarella Stuffed Mushrooms

1 Tbsp Sun-dried tomatoes chopped  salt grinder pepper grinder 1 Tsp olive oil 6 mushroom caps  1 pkg. fresh mozzarella Directions; mix tomatoes, olive oil, salt and pepper to taste.  Put part of mix in each mushroom cap.  Top each mushroom with a piece of fresh mozzarella.  Broil in oven on lower setting until cheese just starts to brown.  Serve warm. Rustic Apple Tart

This tart is so popular that I keep making it and I can’t seem to keep any in my house.  A family friend ran off with half of it last time I made it.  And the super picky eaters where all over it.  That means it was a super hit. Very simple recipe 1 rolled out pie crust 3 to 4 organic granny smith apples ( depending on the size of the apples sometimes I use 3 and other times I use 4 so have 4 just in case you need it) 1 cup slivered almonds 1/4 teaspoon  organic cinnamon  1 tablespoon organic salted butter 2 tablespoon organic sugar  divided 1/4 cup orange marmalade Directions:  Lay your pie crust out on a cookie sheet.  I like to use a silicone slip pad on my cookie sheet for no sticking results.  In a food processor put your nuts, butter, cinnamon, and 1 tablespoon sugar.  Pulse until all nuts are ground up in a consistent medium sand like texture. Lolly Pop Appatizers

These look so cute with a great mouthwatering flavor. 1 roll seamless dough sheet 1/2 tsp Dill 1/4 cup sun-dried tomatoes 5 oz. goat cheese pretzel sticks Directions Goat cheese needs to be at room temperature.  Mix goat cheese, dill and tomatoes together.  Roll out dough sheet and spread mixture evenly over dough.  Roll dough sheet back up.  Slice one inch pieces of roll until entire roll is sliced.  Lay out slices on a baking sheet.  Bake at 350 until golden.  While still warm stick a pretzel stick in each circle and serve. Mediterranean burgers

I love grilling during the summer and these are some great burgers for backyard fun. 1 lb hormone and antibiotic free lean ground beef or ground turkey 4 tablespoons chopped sun-dried tomatoes 2 tablespoons feta cheese 1 teaspoon ground sea salt 1/4 teaspoon white pepper 4 organic wheat hamburger buns Directions: Take ground beef and mix sun-dried tomatoes, sea salt and white pepper.  Form mixture into four hamburger patties.  Grilled too desired preference (ie.  medium to well done)  Toast hamburger buns on grill and place cooked burgers on buns, top burgers with feta and place top bun.  These are great drizzled with some white  balsamic vinaigrette and are wonderful alone.
