Artichoke Tortellini

I love cooking with Wine . I even enjoy wine clubs where you can find out more about wines and try ones you might not otherwise drink. I have read many articles saying that the healthiest women over 40 are women who drink one glass of red wine a day.  Below is one of my favorite recipes with white wine. 1/2 Cup Marinated Artichokes  1 1/2 Tbsp Capers  1 tsp Lemon Zest  2 Cloves Garlic  1/4 cup of white wine ( I used Sauvignon Blanc) 1 1/2 Tbsp Pine Nuts 1/4 cup of oil from the Marinated Artichokes 1/4 Cup Feta cheese 1 package all natural cheese and spinach tortellini by Barilla  Directions; Chop the Artichokes, Crush Garlic and chop, place in a pan.  Add oil and pine nuts saute until pine nuts turn slightly golden.  Reserve feta cheese until the end. Caprese Crostini

I love to keep Crostini on hand to snack on.  They are so versatile you can top a soup or whip up a quick appetizer. I made these as a side for dinner last night they were a huge hit. 8 pieces of Crostini 1 tbs pesto 1 tbs chopped Fire roasted tomatoes 2 slices of mozzarella Directions Place crostini on a lined baking sheet.  spread a bit of pesto on each crostini.  Next place a small piece of fire roasted tomato. Tear uneven pieces of cheese and place on top.  Broil in oven until just golden and serve. Green   Shellfish Blue   Soy Orange  Fish

Super Easy Blueberry Muffins

I love to make things that are easy when the kids are home so I can spend more time with them.  This is just the recipe. 1 package preservative free blueberry muffin mix 2/3 cups of water 1/2 cup of Ricotta cheese 2 eggs Directions: If your mix has canned blueberries.  Put them to the side.  Mix all other ingredients together.  When everything is incorporated fold in blueberries.  Fill your muffin cups 3/4 of the way full. Taste Of Summer Salad

15 oz. bag of organic spinach 6 to 8 sliced organic strawberries 1 avocado  2 tbsp crumbled blue cheese 2 tbsp chopped pecans Dressing: 1 clove garlic 2 tsp honey 2 tsp spicy brown mustard 2 tbsp Raspberry vinegar 2 tbsp balsamic vinegar 4 tbsp olive oil Directions:  peal and remove pit of avocado.  Slice avocado and place ingredients for salad on plate.   Grate garlic and mix dressing ingredients together.  I like to put the  dressing on the side so that each person can adjust the amount they want. Valentine Fun

Tomorrow is Valentine's Day.  I am ready, are you?  In the morning I will be up making a special breakfast I don't have time for scratch on school mornings.  However I found some great all natural orange cranberry scones I will shape into hearts and bake up in the morning.  I will prepare some potatoes into shreds for hash brown bake today. I will mix all the ingredients tonight so it is ready to pop in the oven in the morning.  Do a bit of decorating in the kitchen.  Once the kids are in bed I will put our their gifts at their place settings so while they are waiting on their hot scones and hash browns they will be opening their gifts.   Hash Brown bake  1 lb shredded potatoes (organic) 1cup shredded cheddar cheese 8 oz. sour cream 1/4 cup melted butter 1/4 tsp white pepper 5 dashes of hot sauce Directions:  mix ingredients together.  Spray an 8 inch baking dish with olive oil.  Place ingredients in dish. ...

Artichoke Chicken

I finally got a picture. My family loved the smell and as soon as I put it on a plate they ate it up.  I only got one bite of the chicken because the kids asked for mine when they finished their portion. They ate so fast they were asking for more before I even made it to the table.  Ok on to the recipe.   1 Can of artichoke bottoms 1 teaspoon adobe seasoning 1/2 teaspoon salt 1/4 cup olive oil 1/2 cup white wine 1/2 teaspoon garlic powder 4 boneless skinless chicken breast Directions:  cut the artichokes into quarters.  Put olive oil in skillet and place chicken in skillet.  Put in artichokes in skillet.  Pour wine in skillet.  Sprinkle 1/2 adobe, salt, and garlic on chicken.  Cover skillet and cook five minutes on medium heat.  Flip chicken and sprinkle the rest of seasoning on chicken.  Return cover and cook five more minutes.  Uncover and cook additional few minutes until chicken is done and se...

Mom's Breakfast Sandwich

This is my favorite breakfast.   1 organic egg with omega-3 2 pieces of whole grain toast schemer of spinach and artichoke cream cheese Directions: Cook one egg over easy.  Toast bread and place egg on piece of toast. Schemer other piece of toast with Cream cheese and place on top of egg. Best Banana Bread

2 Bananas (very Ripe) 4 tbsp. organic butter 1 egg with omega 3  2/3 cup organic sugar 1 1/4 cup organic flour 1 tsp baking soda  1 1/2 tbsp rum 1 1/2 tsp Organic Vanilla  1/2 tsp Organic Nutmeg 1 tsp Organic Cinnamon  Directions:  Cream Butter, egg and sugar.  Peal banana’s and chop add to mixture and mix until smooth.   sift dry ingredients and mix with creamed mixture.  Add Rum and Vanilla thoroughly mix and bake in greased loaf pan at 350 degrees for 30 to 40 minutes.   Serve sliced and warm plain or with organic butter.  Green   Shellfish Yellow  Nuts (research says nutmeg is safe for people with allergy) Blue   Soy Purple  Milk Red  Eggs Orange  Fish

 My refreshing version of the great margarita, just in time for Super Bowl Sunday!!   2 parts Club soda 1 part white tequila  splash of Triple sec  Ice  Salt for rim (optional)  Four wedges of lime Directions  If you want salt, wet rim of glass and put into the salt. Put Ice in glass and remaining ingredients into glass.  squeeze limes into drink. Stir and enjoy.  This is a huge hit with all my friends.
