Greek village salad

This so easy. I have been making it for some time, my husband loves it. One night a friend from Greece was over and said in Greece they call it village salad. One package pesticide free grape tomatoes. 1 cucumber 1/4 cup feta cheese 1 tbsp olive oil 1 tbsp white wine vinager Salt and pepper to taste Cut tomatoes in half. Peel cucumber and slice into bite size pieces. Mix all ingredients together in a bowl and serve. Green   Shellfish Pink  Gluten Yellow  Nuts Blue   Soy Red  Eggs Orange  Fish

Bubble Juice

Bubble juice is so much fun my daughter loves this especially when she is not feeling well.   1 cup organic small Tapioca pearls Bottle of Juice.   Really large straw Directions: Cook tapioca according to directions. Let cool and rinse thoroughly.  In a tall clear glass put two tablespoons of tapioca and favorite Juice.  We like pomegranate and juices that are a blend of fruit and veggies. Pizzelles

Pizzelles are an italian tradition.  My family always made these for every holiday and it was one of the recipes I was so excited to learn when I was very young.  3 large eggs with omega-3 1 3/4 cups of unbleached organic flour 3/4 cups  organic sugar 1 tablespoon organic vanilla 1/2 cup melted butter 2 teaspoons baking powder 1/2 cup of organic powdered sugar Directions:  Beat eggs and add sugar slowly, add cooled melted butter continue until smooth.  Sift flour and baking soda and slowly mix into egg/sugar/butter.  Mix in vanilla.  You need a Pizzelle maker, place a spoon full in each half of heated pizzelle maker.  Keep an eye on them the cook fast.  Remove with a fork and Sprinkle with sifted powdered sugar.  Enjoy when cooled.  Green   Shellfish Yellow  Nuts Blue   Soy Orange  Fish

Spaghetti and Meatballs

When it comes to this recipe keep it simple.  This is a great fast recipe, using store bought meatballs.  We are so busy these days that few of us have time to make homemade meatball I can post a homemade recipe later, but this recipe is for families on the go.   2 Cans organic diced tomatoes 2 lbs cooked hormone and antibiotic free turkey meatballs 2 Bay leaves 1 1/2 teaspoon dried organic basil 1 teaspoon organic garlic powder 1 teaspoon organic  sugar 1/2 teaspoon  sea salt 1 lb spaghetti noodles with protein and omega-3 1 tablespoon organic olive oil Directions:  puree the tomatoes, mix ingredients together (except for noodles) and place in crock pot or slow cooker with meatballs.  Put sauce on low and cook for 2 to 3 hours.  You can get this together before you go to pick up the kids and when you are done with after school activities dinner is almost too.  Cook pasta according to directions.  Put a sal...

Cream Cheese Chicken Burritos

16 oz. Cream Cheese  20 oz. cooked boneless skinless chicken breast shredded 6 drops of hot Sauce 1/2 cup of shredded 4 cheese mexican blend Salt to taste 4 large tortilla  Sauce  1/2 cup sour cream  1/2 cup of shredded 4 cheese mexican blend Directions: Mix cream cheese, chicken, hot sauce, cheese, and salt place 1/4 of mixture in each tortilla.  Fold tortilla up and place seam side down in a greased casserole dish. bake at 370 degrees for 15 minutes uncovered  mix sour cream and cheese and place on top of burritos, continue baking for another 5 minutes Green   Shellfish Yellow  Nuts Blue   Soy Red  Eggs Orange  Fish

White Wine Chicken

3 boneless skinless chicken breast  4 ounce prosciutto salt and white  pepper to taste 1/2 cup of wine 1/4 of a medium yellow onion 1/2 cup of milk  1 teaspoon of flour one box of penne pasta Directions:  cook this in a crock pot. Put the chicken in the crock pot, cut up the prosciutto and add.    Puree the onion and use some of the wine to get it smooth (so the kids don’t see the onion) add rest of wine, puree, salt and white pepper to chicken and cook 6 hours on low. Remove and  shred chicken. Boil penne to al dente.   Add milk and flour to sauce left in crock pot. Greek Snack

1/2 cup of plain greek yogurt  1 tablespoon of diced walnuts  1 teaspoon Honey Directions this is a great mommy snack.  Layer ingredients and enjoy. Green   Shellfish Pink  Gluten Blue   Soy Red  Eggs Orange  Fish
