Zesty Summer Salad

I love this salad! It is super easy to make, with bright summer flavors, you will find yourself wanting more.  Sometimes I feel no one wants a recipe so simple.  However, someone asked me the other day about my recipes.  They wanted to know if my cooking was approchable.  She was worried that because of my photos she would not be able to make myfood.  I reassured her that I try to make food that anyone can cook.  I want your kids to cooking in the kitchen with you.  I write recipes for people who are new cooks not just seasoned kitchen aficionados. Simple Avocado

1 avocado balsamic vinegar olive oil sea salt grinder Directions;  cut avocado in half and remove pit.  Remove peel and slice in bite size pieces. Arrange on a plate and drizzle with balsamic vinegar and olive oil , salt to taste with your sea salt grinder . Crab Cake Stuffed Avocado

I love crab cakes and avocados.  I wanted to incorporate both in a lighter version this is what I came up with. They turned out great, this will be a great go to for a quick lunch.  Definitely would impress friends if you need to make a couple for a luncheon and serve with a side of baby greens. Ingredients 1 10 oz can of crab meat 1/4 cup of chopped sweet onions 3 sun-dried tomato halves chopped 3 quarters of marinated artichoke chopped 3 cloves of garlic 3 tbsp organic sour cream 1/2 tsp of lemon juice  dash of cheyenne pepper 1/8 tsp dry mustard 1 tbsp organic butter 1 Avocado  salt to taste Directions  Drain crab meat and check for shell pieces.  Put to the side. In a small saute pan. On med low heat, place butter and onions. Healthy Burrito

Guacamole

This is a super easy kid friendly Guacamole that my kids make themselves. 1 avocado salt grinder 1 lime  Take one avocado cut in half and remove pit, then peal skin off.  Place avocado pieces in mortar give the kids the petal and let them pound a squish away.  Cut lime into wedges.  Ok now the fun part have the kids squeeze in some lime juice and add salt.  Have chips handy so the kids can taste their creation and keep adding salt and lime juice until they get it just the way they like.   Remember add in little amounts at a time.
