Potato Breakfast Cassarole

I made this over the fourth of July,  It received such a good response from my Instagram story that I am posting it today.  I know, I am a day late posting with the holiday. Sorry about that.  I feel bad that I am posting two potatoes in a row, but Instagram asked for it so here you go.  I love this breakfast recipe because it is easy and feeds a bunch of people.  What more do you need for breakfast?  Anything you can make while still drinking your first cup of coffee is a winner in my book. German Potatoes

I have no idea why these are called German. I tasted a recipe years ago, and someone called them german potatoes.  I created the potatoes in college as a dinner staple.  This is a delicious take on potatoes, and my family loves this flavorful dish so much. Breakfast burrito

My new breakfast of champions!! I am now in love with this. My hubbs loved it too!! Four flour tortillas Half a bag of shredded hash browns. Olive oil spray 1 tsp adobe seasoning 1can black beans 1/4 cup chopped yellow onion 2 cloves garlic chopped 1/2 tsp cumin 1 tsp adobe seasoning 1 tsp olive oil 1 bay leaf Directions Easy tip is to keep bag of shredded potatoes in the refrigerator for faster cooking on school mornings. Spray skillet with olive oil. Add potatoes and seasoning. Stir and cook on med turning potatoes twice while cooking. In a small pot add olive oil and onions cook until translucent. Add remaining ingredients bring to a boil then turn down to low. Cook 5 more minutes. Camping potatoes

With all of this great weather.  Many people are packing up and starting to head out on camping trips.  These potatoes are great camping or out on the grill in the backyard, 5 organic potatoes, thinly sliced 1 T. Worcestershire sauce 1 small red onion, sliced  salt and pepper to taste 6 tsp. organic butter, cut into pieces  1/3 c. organic chicken broth 1/3 c.  hormone free shredded cheddar cheese  4 slices of bacon, chopped (preservative free) Directions: Preheat an outdoor grill for high heat. On a piece of heavy foil approximately 20 x 20 inches. Place the potatoes and onion on foil. Dot with butter. In a medium bowl, mix cheddar cheese,  Worcestershire sauce, salt and pepper. Sprinkle the mixture over the potatoes. Fold edges of foil. Cover potatoes with chicken broth. Seal foil  tightly and place on the prepared grill. Diablo Potato Salad

This sounds spicy but really it is a kid friendly potato salad that is red like a devil, without the kick that kids run from. Make this next time you have a cook out, packed with flavor it is sure to have people coming back for seconds. 3 pounds  baby  Yukon gold potatoes, halved 1 tsp Salt 1 tbsp smoked  sweet  paprika 1/2 tsp  pepper 1/2 tsp chile lime seasoning 2 tablespoons Dijon mustard 1/3 cup extra-virgin olive oil 1 tablespoon minced chives Directions: put cut potatoes in boiling water and cook for  about 20 minutes until tender.   While potatoes are cooking, Mix remainder of ingredients together.  I used a whisk to make sure everything was incorporated well. Valentine Fun

Tomorrow is Valentine's Day.  I am ready, are you?  In the morning I will be up making a special breakfast I don't have time for scratch on school mornings.  However I found some great all natural orange cranberry scones I will shape into hearts and bake up in the morning.  I will prepare some potatoes into shreds for hash brown bake today. I will mix all the ingredients tonight so it is ready to pop in the oven in the morning.  Do a bit of decorating in the kitchen.  Once the kids are in bed I will put our their gifts at their place settings so while they are waiting on their hot scones and hash browns they will be opening their gifts.   Hash Brown bake  1 lb shredded potatoes (organic) 1cup shredded cheddar cheese 8 oz. sour cream 1/4 cup melted butter 1/4 tsp white pepper 5 dashes of hot sauce Directions:  mix ingredients together.  Spray an 8 inch baking dish with olive oil.  Place ingredients in dish. ...

Ranched Up Mock Mashed Potatoes

Trying to get your kids to eat Cauliflower?  This is the perfect way.  My kids never know they are eating Cauliflower.  This is a great recipe my kids have eaten this for years with no complaints.  1/3 cup organic Ranch dressing 1 head  cauliflower 1 small organic yellow onion 1/4 teaspoon salt 2 cloves Garlic 2 small organic potatoes 2 tablespoons organic salted butter Directions;  Chop and rinse cauliflower, peel and chop onion, peal garlic, peel and chop potatoes.  Place your veggies in a pot of boiling water.  Add salt reduce to a low boil and cook for 15 minutes.  Drain water and add in ranch dressing and butter.  Use a mixer or hand blender to mix everything until smooth.  Sevre them up the kids will love them. Corn Chowder

Ok this is super easy. Since I was sick last week.  I needed a mommy day off meal and this fits the bill. I ate this when I was a kid and now my kids eat a more organic version. When my son was little he called it hot dog soup.  We still laugh because he thought the Kielbasa was hot dogs. 2 cans organic potato soup 1 can organic corn 1 can cream corn 1 package hormone and antibiotic free Kielbasa  sausage 1/2 cup sour cream organic 1 cup organic milk 1/2 cup shredded Monterey jack cheese 1 tsp paprika 1/2 tsp white pepper 1/2 tsp garlic powder Directions This super easy!  Cut sausage up in cubes.  Throw everything in crock pot. Shrimp and Potato Soup

2 cups of water 1/4 large chopped onion 1 cup chopped organic carrot 1 can evaporated milk (organic preferred) 1/2 pound fresh peeled shrimp 1 tbsp chicken base organic 3 large red skin golden potatoes organic 1/2 teaspoon of white pepper 1 teaspoon of sea salt 1 teaspoon butter organic 1 teaspoon olive oil organic directions:  saute onion and carrots with  olive oil until onions are translucent.  puree onion and carrots with 1/2 cup of water and chicken base.  In a large pot put remainder of water and puree mix.  If your child does not like the peel on the potato, peel and dice.  Put potatoes in soup base and bring to a boil, reduce to simmer for 10 minutes.  Saute shrimp in a skillet with butter and half of the salt and pepper.   When shrimp are pink add to soup base.  Add the remainder of the salt and pepper and evaporated milk.
