Potato Breakfast Cassarole

I made this over the fourth of July,  It received such a good response from my Instagram story that I am posting it today.  I know, I am a day late posting with the holiday. Sorry about that.  I feel bad that I am posting two potatoes in a row, but Instagram asked for it so here you go.  I love this breakfast recipe because it is easy and feeds a bunch of people.  What more do you need for breakfast?  Anything you can make while still drinking your first cup of coffee is a winner in my book. Matcha Chia Pudding

I love chia pudding for breakfast in the morning.  I make it the night before so it is ready and waiting for me when I wake up.  Over the years I have made a variety of flavors.  I love the bold green of the matcha to get the day started.  Makes 2 Servings  17.3g  Carbs     7.5g  Protein 1 1/2 cup almond milk 1/4 cup chia seeds 2 tsp honey 1 1/2 tsp matcha 1/2 tsp vanilla Directions Using a mason jar with a lid.  Place all ingredients in a mason jar.  Place lid on tight. Shake vigorously.  Put in the refrigerator for 10 minutes.  Remove and shake again. Replace in the refrigerator and let sit in the refrigerator for 2 hours or overnight.  Top with your favorite fruit.  The fruit was not counted in the carb or protein counts. Ebook Hardback

Coffee Cake

A giant CHEAT recipe! Carbs 49.5g  Protein 3.8g 9 servings You can be a star without making everything from scratch.  You guys loved the coffee cake yesterday so here it is.  Please don't laugh. I know this is so crazy easy.  It's the Half and Half that makes everyone love my coffee cake so much.  Sometimes I make a coffee cake from scratch, but really I can have this in the oven in five minutes without pulling out 10 ingredients and more clean up than I want in the morning. My carb and protein counts are based on the brand of coffee cake mix I buy.  I tagged the brand on my Instagram. Ingredients Cinnamon Crumb topping coffee cake mix as natural as possible Half and Half egg Irish butter Directions Preheat oven to 350 I bake mine using convection so the crumb topping is more crunchy. Breakfast burrito

My new breakfast of champions!! I am now in love with this. My hubbs loved it too!! Four flour tortillas Half a bag of shredded hash browns. Olive oil spray 1 tsp adobe seasoning 1can black beans 1/4 cup chopped yellow onion 2 cloves garlic chopped 1/2 tsp cumin 1 tsp adobe seasoning 1 tsp olive oil 1 bay leaf Directions Easy tip is to keep bag of shredded potatoes in the refrigerator for faster cooking on school mornings. Spray skillet with olive oil. Add potatoes and seasoning. Stir and cook on med turning potatoes twice while cooking. In a small pot add olive oil and onions cook until translucent. Add remaining ingredients bring to a boil then turn down to low. Cook 5 more minutes. Take your flour tortillas at room tempature and layer potatoes and beans with most of the liquid drained as you scoop from the pot. My husband added some scrambled eggs to his. I liked it with out. Little Miss Crumpet

This is my new favorite breakfast.  Super easy. 1 crumpet (store bought) toasted 1 tablespoon part skim riccota 1 teaspoon honey Directions; toast crumpet spread Ricotta over crumpet drizzel with honey, I don’t know if I really use a teaspoon or less I just drizzle a bit on top. Cream Cheese Chicken Burritos

16 oz. Cream Cheese  20 oz. cooked boneless skinless chicken breast shredded 6 drops of hot Sauce 1/2 cup of shredded 4 cheese mexican blend Salt to taste 4 large tortilla  Sauce  1/2 cup sour cream  1/2 cup of shredded 4 cheese mexican blend Directions: Mix cream cheese, chicken, hot sauce, cheese, and salt place 1/4 of mixture in each tortilla.  Fold tortilla up and place seam side down in a greased casserole dish. bake at 370 degrees for 15 minutes uncovered  mix sour cream and cheese and place on top of burritos, continue baking for another 5 minutes Green   Shellfish Yellow  Nuts Blue   Soy Red  Eggs Orange  Fish

Greek Snack

1/2 cup of plain greek yogurt  1 tablespoon of diced walnuts  1 teaspoon Honey Directions this is a great mommy snack.  Layer ingredients and enjoy. Green   Shellfish Pink  Gluten Blue   Soy Red  Eggs Orange  Fish

Fruit Kabobs

Keep junk food kids busy with this tasty fun while you get dinner ready. Put fresh fruit on a plate or in a bowl   cubed honey dew cubed cantaloupe  organic grapes pineapple cubed  organic strawberries green trimmed off and cut in half bamboo skewers  Directions:  Give the  ingredients  to the kids for imagination and  taste buds to enjoy.  Mix it up and add or subtract the fruits your kids really like. Cheese Quiche

This was my son's favorite when he was little.  He use to jump up and down yelling quiche in front of the oven while it cooked.  2 cups organic whole milk (you could use a lower fat if you want) 5 eggs with omega 3 1/2 tsp. hot sauce  1/4 tsp nutmeg 1 cup shredded italian cheese mix 1/2 cup shredded swiss cheese  1/4 tsp thyme (crush with fingers) 1 tsp salt  1 tsp basil  1 uncooked pie crust Directions;  place pie crust in pie dish.  Mix filling ingredients together and place in pie crust. Banana Pancake

Simple and healthy breakfast for kids. 1 Banana 1 egg 1 teaspoon vanilla protein powder Directions:  Mix ingredients together and cook in a pan like a pancake.  Makes two.  For a little extra sweetness sprinkle with cinnamon sugar. Mom's Breakfast Sandwich

This is my favorite breakfast.   1 organic egg with omega-3 2 pieces of whole grain toast schemer of spinach and artichoke cream cheese Directions: Cook one egg over easy.  Toast bread and place egg on piece of toast. Schemer other piece of toast with Cream cheese and place on top of egg. Cut sandwich Diagonal and enjoy.  Great way to start the Day!!!!
