Italian stuffing

1 1/2 bitty boule sour dough bread 2 tsp dried onion 1 can organic diced tomatoes 1/2 tsp garlic powder 1 tsp dried basil 1/2 tsp dried thyme 1 tsp chicken soup base stock 1 cup water 1 cup marinated quartered artichoke hearts Everyone loves this stuffing.  Its super easy. Directions  Tear bread up into chunks and put to the side.  Place the remainder of ingredients into a sauce pan and bring to a boil.  Stir in bread.  remove from head and place in a greased baking dish.  Back in the oven for 20 minutes at 350.  make sure the top is browned and crunchy. Cranberry Sauce

Love homemade sauce and for a couple of years I have been working with different recipes and trying to come up with the perfect sauce.  Last year I made one with out cooking this cranberries.  This years sauce is a cooked sauce give it a try and let me know what you think.  1 bag cranberries 12 ounce  4 tbsp sugar 1 cup orange juice 1 tsp lemon juice zest from one orange directions In a small pot place cranberries, sugar, orange juice, and lemon juice.  Bring to a simmer on med heat and stir.  let this simmer until cranberries pop.  I like my sauce less chunking so I use my hand mixer to blend it a bit more.  Stir in orange zest and let cool. Kiwi Poppy Seed Bread

One package of lemon poppyseed muffin mix 3/4 cup organic milk 1/4 cup olive oil 1 egg with omega 3 2 organic kiwi 1 scoop of vanilla whey protein directions peel and puree kiwis.  mix all ingredients together until smooth.  set oven at 375 degrees F.  place batter in a greased loaf pan and bake until a tooth pick comes out clean.  Enjoy!! Sugar Muffins

14 oz package of organic or natural oat bran muffin mix 1 cup organic apple sauce 1 scoop vanilla whey protein powder 2 tbsp water My son gave these the name sugar muffins he says that is what they taste like sugar mmmmm.  Mix ingredients together thoroughly. Grease or use spray oil on muffin pan or use cupcake liners in the pan.   Put mix in muffin pan, each cup 2/3 full. Preheat oven to 400 degrees F.  Bake 10-12 mins until a toothpick comes out clean. Crab Cake Stuffed Avocado

I love crab cakes and avocados.  I wanted to incorporate both in a lighter version this is what I came up with. They turned out great, this will be a great go to for a quick lunch.  Definitely would impress friends if you need to make a couple for a luncheon and serve with a side of baby greens. Ingredients 1 10 oz can of crab meat 1/4 cup of chopped sweet onions 3 sun-dried tomato halves chopped 3 quarters of marinated artichoke chopped 3 cloves of garlic 3 tbsp organic sour cream 1/2 tsp of lemon juice  dash of cheyenne pepper 1/8 tsp dry mustard 1 tbsp organic butter 1 Avocado  salt to taste Directions  Drain crab meat and check for shell pieces.  Put to the side. In a small saute pan. On med low heat, place butter and onions. Little Miss Crumpet

This is my new favorite breakfast.  Super easy. 1 crumpet (store bought) toasted 1 tablespoon part skim riccota 1 teaspoon honey Directions; toast crumpet spread Ricotta over crumpet drizzel with honey, I don’t know if I really use a teaspoon or less I just drizzle a bit on top. Greek village salad

This so easy. I have been making it for some time, my husband loves it. One night a friend from Greece was over and said in Greece they call it village salad. One package pesticide free grape tomatoes. 1 cucumber 1/4 cup feta cheese 1 tbsp olive oil 1 tbsp white wine vinager Salt and pepper to taste Cut tomatoes in half. Pizzelles

Pizzelles are an italian tradition.  My family always made these for every holiday and it was one of the recipes I was so excited to learn when I was very young.  3 large eggs with omega-3 1 3/4 cups of unbleached organic flour 3/4 cups  organic sugar 1 tablespoon organic vanilla 1/2 cup melted butter 2 teaspoons baking powder 1/2 cup of organic powdered sugar Directions:  Beat eggs and add sugar slowly, add cooled melted butter continue until smooth.  Sift flour and baking soda and slowly mix into egg/sugar/butter.  Mix in vanilla.  You need a Pizzelle maker, place a spoon full in each half of heated pizzelle maker.  Keep an eye on them the cook fast.  Remove with a fork and Sprinkle with sifted powdered sugar.  Enjoy when cooled.  Green   Shellfish Yellow  Nuts Blue   Soy Orange  Fish
