Portobello Mushroom Burger

This recipe is for one but you can multiply to make as many as you need. 1 large portobello mushroom 1 tablespoon sun-dried tomatoes 3 tablespoons feta cheese 1 teaspoon white balsamic vinaigrette 1 organic wheat hamburger bun Directions:   Wash off portobello and remove stem.  Place sun-dried tomatoes inside and top with feta cheese.  Grill on medium heat for about 8 minutes.  Place hamburger bun on grill to toast.   When Mushroom is done remove and drizzle vinaigrette over.  Place on toasted bun and serve.  I keep all the ingredients on hand so I can make these up whenever everyone else wants real burgers. Mediterranean burgers

I love grilling during the summer and these are some great burgers for backyard fun. 1 lb hormone and antibiotic free lean ground beef or ground turkey 4 tablespoons chopped sun-dried tomatoes 2 tablespoons feta cheese 1 teaspoon ground sea salt 1/4 teaspoon white pepper 4 organic wheat hamburger buns Directions: Take ground beef and mix sun-dried tomatoes, sea salt and white pepper.  Form mixture into four hamburger patties.  Grilled too desired preference (ie.  medium to well done)  Toast hamburger buns on grill and place cooked burgers on buns, top burgers with feta and place top bun.  These are great drizzled with some white  balsamic vinaigrette and are wonderful alone. Camping potatoes

With all of this great weather.  Many people are packing up and starting to head out on camping trips.  These potatoes are great camping or out on the grill in the backyard, 5 organic potatoes, thinly sliced 1 T. Worcestershire sauce 1 small red onion, sliced  salt and pepper to taste 6 tsp. organic butter, cut into pieces  1/3 c. organic chicken broth 1/3 c.  hormone free shredded cheddar cheese  4 slices of bacon, chopped (preservative free) Directions: Preheat an outdoor grill for high heat. On a piece of heavy foil approximately 20 x 20 inches. Place the potatoes and onion on foil. Dot with butter. In a medium bowl, mix cheddar cheese,  Worcestershire sauce, salt and pepper. Sprinkle the mixture over the potatoes. Fold edges of foil. Cover potatoes with chicken broth. Seal foil  tightly and place on the prepared grill.
