Green Wine

We  are looking for ways to make our lives more green.  Now you can learn about green wine .  This was new information for me.  I was not aware of green wine until this was brought to my attention.  I hope you learn from this just as I did. Quick Mediterranean Pasta Salad

1 box Whole Grain Linguine 1/2 pound of crumbled feta cheese 1 can of diced tomatoes with onion, basil and garlic Directions:  Cook pasta according to directions.  Drain.  Mix in diced tomatoes and cool.  Mix in feta cheese and serve chilled.  However I will say my son loved this still warm.  He thought it was awesome and ate two bowls.  This is so fast and you can trow together in a snap.  Green   Shellfish Pink  Gluten Yellow  Nuts Blue   Soy Red  Eggs Orange  Fish

Rustic Apple Tart

This tart is so popular that I keep making it and I can’t seem to keep any in my house.  A family friend ran off with half of it last time I made it.  And the super picky eaters where all over it.  That means it was a super hit. Very simple recipe 1 rolled out pie crust 3 to 4 organic granny smith apples ( depending on the size of the apples sometimes I use 3 and other times I use 4 so have 4 just in case you need it) 1 cup slivered almonds 1/4 teaspoon  organic cinnamon  1 tablespoon organic salted butter 2 tablespoon organic sugar  divided 1/4 cup orange marmalade Directions:  Lay your pie crust out on a cookie sheet.  I like to use a silicone slip pad on my cookie sheet for no sticking results.  In a food processor put your nuts, butter, cinnamon, and 1 tablespoon sugar.  Pulse until all nuts are ground up in a consistent medium sand like texture. Camping potatoes

With all of this great weather.  Many people are packing up and starting to head out on camping trips.  These potatoes are great camping or out on the grill in the backyard, 5 organic potatoes, thinly sliced 1 T. Worcestershire sauce 1 small red onion, sliced  salt and pepper to taste 6 tsp. organic butter, cut into pieces  1/3 c. organic chicken broth 1/3 c.  hormone free shredded cheddar cheese  4 slices of bacon, chopped (preservative free) Directions: Preheat an outdoor grill for high heat. On a piece of heavy foil approximately 20 x 20 inches. Place the potatoes and onion on foil. Dot with butter. In a medium bowl, mix cheddar cheese,  Worcestershire sauce, salt and pepper. Sprinkle the mixture over the potatoes. Fold edges of foil. Cover potatoes with chicken broth. Seal foil  tightly and place on the prepared grill. Diablo Potato Salad

This sounds spicy but really it is a kid friendly potato salad that is red like a devil, without the kick that kids run from. Make this next time you have a cook out, packed with flavor it is sure to have people coming back for seconds. 3 pounds  baby  Yukon gold potatoes, halved 1 tsp Salt 1 tbsp smoked  sweet  paprika 1/2 tsp  pepper 1/2 tsp chile lime seasoning 2 tablespoons Dijon mustard 1/3 cup extra-virgin olive oil 1 tablespoon minced chives Directions: put cut potatoes in boiling water and cook for  about 20 minutes until tender.   While potatoes are cooking, Mix remainder of ingredients together.  I used a whisk to make sure everything was incorporated well. Taste Of Summer Salad

15 oz. bag of organic spinach 6 to 8 sliced organic strawberries 1 avocado  2 tbsp crumbled blue cheese 2 tbsp chopped pecans Dressing: 1 clove garlic 2 tsp honey 2 tsp spicy brown mustard 2 tbsp Raspberry vinegar 2 tbsp balsamic vinegar 4 tbsp olive oil Directions:  peal and remove pit of avocado.  Slice avocado and place ingredients for salad on plate.   Grate garlic and mix dressing ingredients together.  I like to put the  dressing on the side so that each person can adjust the amount they want. Ranched Up Mock Mashed Potatoes

Trying to get your kids to eat Cauliflower?  This is the perfect way.  My kids never know they are eating Cauliflower.  This is a great recipe my kids have eaten this for years with no complaints.  1/3 cup organic Ranch dressing 1 head  cauliflower 1 small organic yellow onion 1/4 teaspoon salt 2 cloves Garlic 2 small organic potatoes 2 tablespoons organic salted butter Directions;  Chop and rinse cauliflower, peel and chop onion, peal garlic, peel and chop potatoes.  Place your veggies in a pot of boiling water.  Add salt reduce to a low boil and cook for 15 minutes.  Drain water and add in ranch dressing and butter.  Use a mixer or hand blender to mix everything until smooth.  Sevre them up the kids will love them. Crescent Casserole

I made this up Saturday. I had some crescents still laying around from the week and need to use them up.  What baked up golden was a family hit. 8 x 8 glass baking dish three large crescents from the bakery 1 package organic cream cheese 4 ounces of 5 cheese Italian blend shredded 5 eggs from chickens with out hormones 3/4 cup of milk organic 5 dashes hot sauce 1/2 tsp basil salt to taste 1/4 tsp nutmeg Directions Tear crescents into pieces and spread around baking dish Soften cream cheese. I pop it in the microwave for 30 seconds.  Mix all the ingredients together with the cream cheese until thoroughly integrated. Pour mixture over torn crescents.  Use a fork and push the crescents  into the mixture so the soak up the liquids.  Cover baking dish with foil.  Bake in a pre heated oven at 325 for 1 hour, during the last 10 minutes remove foil so the top can turn golden.
