Stuffed and Grilled Mushrooms

I have been eating mainly vegetables for more than year now and my kids are starting to eat a lot more veggies.  I make a couple of veggie sides each night to choose from.  This is an easy option that you can prep ahead of time and cook as soon as you walk in the door.  So you can get your family to the table faster. 5.3 oz garlic and basil goat cheese 1 tbs chopped sun-dried tomatoes 8 mushroom caps Directions: Mix goat cheese and sun dried tomatoes together.  fill each mushroom cap.  Grill on upper rack of barbecue grill about 8 minutes.  They need to stay firm so they keep the filling.  Serve hot. Portobello Mushroom Burger

This recipe is for one but you can multiply to make as many as you need. 1 large portobello mushroom 1 tablespoon sun-dried tomatoes 3 tablespoons feta cheese 1 teaspoon white balsamic vinaigrette 1 organic wheat hamburger bun Directions:   Wash off portobello and remove stem.  Place sun-dried tomatoes inside and top with feta cheese.  Grill on medium heat for about 8 minutes.  Place hamburger bun on grill to toast.   When Mushroom is done remove and drizzle vinaigrette over.  Place on toasted bun and serve.  I keep all the ingredients on hand so I can make these up whenever everyone else wants real burgers. Italian stuffing

1 1/2 bitty boule sour dough bread 2 tsp dried onion 1 can organic diced tomatoes 1/2 tsp garlic powder 1 tsp dried basil 1/2 tsp dried thyme 1 tsp chicken soup base stock 1 cup water 1 cup marinated quartered artichoke hearts Everyone loves this stuffing.  Its super easy. Directions  Tear bread up into chunks and put to the side.  Place the remainder of ingredients into a sauce pan and bring to a boil.  Stir in bread.  remove from head and place in a greased baking dish.  Back in the oven for 20 minutes at 350.  make sure the top is browned and crunchy. Spaghetti and Meatballs

When it comes to this recipe keep it simple.  This is a great fast recipe, using store bought meatballs.  We are so busy these days that few of us have time to make homemade meatball I can post a homemade recipe later, but this recipe is for families on the go.   2 Cans organic diced tomatoes 2 lbs cooked hormone and antibiotic free turkey meatballs 2 Bay leaves 1 1/2 teaspoon dried organic basil 1 teaspoon organic garlic powder 1 teaspoon organic  sugar 1/2 teaspoon  sea salt 1 lb spaghetti noodles with protein and omega-3 1 tablespoon organic olive oil Directions:  puree the tomatoes, mix ingredients together (except for noodles) and place in crock pot or slow cooker with meatballs.  Put sauce on low and cook for 2 to 3 hours.  You can get this together before you go to pick up the kids and when you are done with after school activities dinner is almost too.  Cook pasta according to directions.  Put a sal...

Aunt Glady's Camarones Pasta

This is one of my favorites my aunt always makes this for me when I see her.   2/3 cup organic extra virgin olive oil 6 organic roma tomatoes 2 heads garlic 1/2 ounce fresh organic Basil 1 pound linguine with omega-3 2 pounds peeled and deveined shrimp 1 teaspoon salt Directions:  Peel and chop garlic.  Chop roma tomatoes and put to side.  Remove stems form basil and chop leaves.  Put olive oil in large pan and saute garlic until just golden.  Add tomatoes and basil cook about 8 to 10 minutes on medium low heat.  Add Shrimp and salt cook until pink. Cook pasta according to directions to al dente and mix with sauce and shrimp.  Serve immediately.  I like to serve with a garnish of graded parmesan cheese. Quick Mediterranean Pasta Salad

1 box Whole Grain Linguine 1/2 pound of crumbled feta cheese 1 can of diced tomatoes with onion, basil and garlic Directions:  Cook pasta according to directions.  Drain.  Mix in diced tomatoes and cool.  Mix in feta cheese and serve chilled.  However I will say my son loved this still warm.  He thought it was awesome and ate two bowls.  This is so fast and you can trow together in a snap.  Green   Shellfish Pink  Gluten Yellow  Nuts Blue   Soy Red  Eggs Orange  Fish

Caprese Crostini

I love to keep Crostini on hand to snack on.  They are so versatile you can top a soup or whip up a quick appetizer. I made these as a side for dinner last night they were a huge hit. 8 pieces of Crostini 1 tbs pesto 1 tbs chopped Fire roasted tomatoes 2 slices of mozzarella Directions Place crostini on a lined baking sheet.  spread a bit of pesto on each crostini.  Next place a small piece of fire roasted tomato. Tear uneven pieces of cheese and place on top.  Broil in oven until just golden and serve. Green   Shellfish Blue   Soy Orange  Fish
