Pineapple Dessert

This is so simple but so good.  And really pretty healthy.  Pineapple is a great aid in digestion.   4 cups Cubed Pineapple 4 tablespoons Carmel Sauce ingredients for carmel sauce 6 tbsp organic butter 1 tsp frangelico 1 cup sugar 1/4 cup heavy whipping cream Directions: put a cup of pineapple in each dish.  So you have four servings.  Place sugar in a sauce pan on med to high head.  Using a wire whisk keep sugar moving so that is melts evenly.  Once all sugar is melted and amber in color.  Add butter.  Once butter is melted and fully incorporated.  remove form heat. Add Frangelico let cool a little and add in the milk this just thins the sauce out so that it drizzles better.  Drizzle warm sauce over pineapple and enjoy! Fruit Kabobs

Keep junk food kids busy with this tasty fun while you get dinner ready. Put fresh fruit on a plate or in a bowl   cubed honey dew cubed cantaloupe  organic grapes pineapple cubed  organic strawberries green trimmed off and cut in half bamboo skewers  Directions:  Give the  ingredients  to the kids for imagination and  taste buds to enjoy.  Mix it up and add or subtract the fruits your kids really like. Valentine Fun

Tomorrow is Valentine's Day.  I am ready, are you?  In the morning I will be up making a special breakfast I don't have time for scratch on school mornings.  However I found some great all natural orange cranberry scones I will shape into hearts and bake up in the morning.  I will prepare some potatoes into shreds for hash brown bake today. I will mix all the ingredients tonight so it is ready to pop in the oven in the morning.  Do a bit of decorating in the kitchen.  Once the kids are in bed I will put our their gifts at their place settings so while they are waiting on their hot scones and hash browns they will be opening their gifts.   Hash Brown bake  1 lb shredded potatoes (organic) 1cup shredded cheddar cheese 8 oz. sour cream 1/4 cup melted butter 1/4 tsp white pepper 5 dashes of hot sauce Directions:  mix ingredients together.  Spray an 8 inch baking dish with olive oil.  Place ingredients in dish. ...

Mango Pineapple Lassa

I am so short on time today with no time to cook.  So I whipped up a Lassa for my lunch.  My friend is from india and they call smoothies Lassa.  She sent me a recipe and even bought me a can of mango pulp.  Which I love, However it has so much sugar and I am really trying to keep my sugar intake low.  So this is my low sugar recipe with pineapple. I bought fresh fruit at the grocery already cut in spears to make it easier.  That way I can make this on the fly. 2 spears fresh mango 2 spears fresh pineapple 2 pods of Green Cardamon 2/3 cup of  plain greek yogurt (organic preferred) handful of ice In a blender put in your mango, pineapple and ice.  Open cardamon pods and take out the seeds.  Smash all the seeds in a mortar and pestle. Add to blender.  Blend thoroughly, stopping to push everything down. Add your yogurt and pulse a couple of times.  Now it is ready to enjoy.  This will be thick, so you might want a straw...
