Events and Brussel Sprout Gratin Live

Today is a little different post. I was on fox4 kc this morning.  I made the Brussel Sprout Gratin on live tv. Italian stuffing

1 1/2 bitty boule sour dough bread 2 tsp dried onion 1 can organic diced tomatoes 1/2 tsp garlic powder 1 tsp dried basil 1/2 tsp dried thyme 1 tsp chicken soup base stock 1 cup water 1 cup marinated quartered artichoke hearts Everyone loves this stuffing.  Its super easy. Directions  Tear bread up into chunks and put to the side.  Place the remainder of ingredients into a sauce pan and bring to a boil.  Stir in bread.  remove from head and place in a greased baking dish.  Back in the oven for 20 minutes at 350.  make sure the top is browned and crunchy. Carmel Apple Cookies

The Carmel Apple Cake was such a huge hit.  The girls at school were asking for it.  However with sauce it does not travel as easy as say a cookie so here is my answer.   Cookies are so easy for travel and I am excited to take them to volleyball tonight. Ingredients for cake 1 and 3/4 cups unbleached all purpose flour 1 tsp baking powder 1/4 tsp salt 1 very large organic apple, peeled, cored and chopped into small cubes 2 large eggs 3/4 cup sugar 3 tbsp Frangelico  1 tsp vanilla 6 tbs  butter, melted  12 chewy carmel candies Directions Sift four baking powder and salt.  Melt butter and mix in to flour with a whisk until crumbly.   Mix eggs, sugar, frangelico, and vanilla until creamed.  slowly add mixture to flour mixture whisking all the time.  Continue mixing until smooth. Artichoke Bruschetta

I love this appetizer.  My husband and kids love it too.  Easy to set out when entertaining. The recipe starts with simple ingredients. 1 cup of marinted artichoke hearts drained. 1tbsp capers 4 oz manchego cheese 1 clove garlic 12 pieces of crostini or toasted slices of baguette bread You have two choices with preparation.  You can had chop or use a food processor.  I used my magic bullet.  It makes for quick clean up.   First finely mince the garlic.  I like it first so that it gives a more even flavor. Add  in the artichoke hearts these can be roughly chopped.  Last add in the capers.  I like them less chopped so that you get little hits of their salty bite.   Once you have your topping mixed spread out on your crostini.  Use a vegetable peeler to make thin slices of cheese.  Put pieces of cheese on top of each piece of bruschetta.  You should have extra cheese.  ...

Greek village salad

This so easy. I have been making it for some time, my husband loves it. One night a friend from Greece was over and said in Greece they call it village salad. One package pesticide free grape tomatoes. 1 cucumber 1/4 cup feta cheese 1 tbsp olive oil 1 tbsp white wine vinager Salt and pepper to taste Cut tomatoes in half. Peel cucumber and slice into bite size pieces. Mix all ingredients together in a bowl and serve. Green   Shellfish Pink  Gluten Yellow  Nuts Blue   Soy Red  Eggs Orange  Fish

Cream Cheese Chicken Burritos

16 oz. Cream Cheese  20 oz. cooked boneless skinless chicken breast shredded 6 drops of hot Sauce 1/2 cup of shredded 4 cheese mexican blend Salt to taste 4 large tortilla  Sauce  1/2 cup sour cream  1/2 cup of shredded 4 cheese mexican blend Directions: Mix cream cheese, chicken, hot sauce, cheese, and salt place 1/4 of mixture in each tortilla.  Fold tortilla up and place seam side down in a greased casserole dish. bake at 370 degrees for 15 minutes uncovered  mix sour cream and cheese and place on top of burritos, continue baking for another 5 minutes Green   Shellfish Yellow  Nuts Blue   Soy Red  Eggs Orange  Fish

Mom's Breakfast Sandwich

This is my favorite breakfast.   1 organic egg with omega-3 2 pieces of whole grain toast schemer of spinach and artichoke cream cheese Directions: Cook one egg over easy.  Toast bread and place egg on piece of toast. Schemer other piece of toast with Cream cheese and place on top of egg. Cut sandwich Diagonal and enjoy.  Great way to start the Day!!!! Artichoke Crab Soup

12 ounces of fresh lump crab meat 1/4 cup organic butter 1/4 cup unbleached organic flour 2 cups organic milk 1 1/2 cup organic half and half 1 1/4 cup grated parmesan cheese 14 oz. artichoke bottoms chopped 1/4 teaspoon white pepper 2 tablespoon white wine I know this is not a healthy soup.  It definitely has a lot of fat.  But think of it a special treat once in a while a treat is ok.  And this soup is really good.   Directions: Melt butter in a sauce pan over low heat.  Add flour and stir until smooth.  Stir constantly until slightly golden. Slowly stir in milk and half and half.  Add cheese.  continue to stir while cooking over medium heat until thickened.  Add artichokes, crab, white wine and white pepper.  Simmer a couple of minutes and serve hot.   Enjoy this wonderful soup. Quick Mediterranean Pasta Salad

1 box Whole Grain Linguine 1/2 pound of crumbled feta cheese 1 can of diced tomatoes with onion, basil and garlic Directions:  Cook pasta according to directions.  Drain.  Mix in diced tomatoes and cool.  Mix in feta cheese and serve chilled.  However I will say my son loved this still warm.  He thought it was awesome and ate two bowls.  This is so fast and you can trow together in a snap.  Green   Shellfish Pink  Gluten Yellow  Nuts Blue   Soy Red  Eggs Orange  Fish
