Meatball Stroganoff

My take is a bit different from your regular  stroganoff however it's a cheat recipe so you will have this on the table fast. Your family will love it even the picky eaters.  I made this after a long day of working, myself and the kids were tired. Pasta is our comfort food so I whipped this up fast so everyone could rest. Especially me. Very little clean up  made it even better.  One package portobello mushrooms  Half medium red onion  1 tsp  chicken soup base  1 cup cooking sherry  1 jar of preservative free Alfredo sauce 2 lbs organic meatballs ( mine are frozen)  Pepper to taste  2 tbsp butter  1 package fettuccine nido  1. Slice onion and mushrooms  2. Place in sauce pan and cook with butter on medium. Until liquid from mushrooms is starting to thicken a little.   3. Add soup base and mix into liquid. 4.  Add sherry and meatballs let simmer five minutes.  5. Add cream sauce, simmer on low 10 minutes...

Shrimp Fettuccine

2 cloves garlic 2 tbsp organic butter melted 1 lb prosciutto 1 cup frozen organic peas 1 box Barilla plus Fettuccine 1/2 cup organic butter softened  1 cup grated parmesan cheese  8 oz carton organic sour cream 1 lb. uncooked peeled and deveined shrimp 1/2 tsp white pepper Directions;   Cook fettuccine according to  package. Drain well.  While pasta is cooking  Crush garlic and saute in 2 tablespoons of butter in a medium skillet. Slice prosciutto into thin strips and put in to skillet. Add peas and shrimp and saute for 3 to 5 minutes until shrimp is pink through.  Add remaining butter sour cream and parmesan cheese. Toss together until all of the pasta is coated. Spaghetti and Meatballs

When it comes to this recipe keep it simple.  This is a great fast recipe, using store bought meatballs.  We are so busy these days that few of us have time to make homemade meatball I can post a homemade recipe later, but this recipe is for families on the go.   2 Cans organic diced tomatoes 2 lbs cooked hormone and antibiotic free turkey meatballs 2 Bay leaves 1 1/2 teaspoon dried organic basil 1 teaspoon organic garlic powder 1 teaspoon organic  sugar 1/2 teaspoon  sea salt 1 lb spaghetti noodles with protein and omega-3 1 tablespoon organic olive oil Directions:  puree the tomatoes, mix ingredients together (except for noodles) and place in crock pot or slow cooker with meatballs.  Put sauce on low and cook for 2 to 3 hours.  You can get this together before you go to pick up the kids and when you are done with after school activities dinner is almost too.  Cook pasta according to directions.  Put a sal...

White Wine Chicken

3 boneless skinless chicken breast  4 ounce prosciutto salt and white  pepper to taste 1/2 cup of wine 1/4 of a medium yellow onion 1/2 cup of milk  1 teaspoon of flour one box of penne pasta Directions:  cook this in a crock pot. Put the chicken in the crock pot, cut up the prosciutto and add.    Puree the onion and use some of the wine to get it smooth (so the kids don’t see the onion) add rest of wine, puree, salt and white pepper to chicken and cook 6 hours on low. Remove and  shred chicken. Boil penne to al dente.   Add milk and flour to sauce left in crock pot. Aunt Glady's Camarones Pasta

This is one of my favorites my aunt always makes this for me when I see her.   2/3 cup organic extra virgin olive oil 6 organic roma tomatoes 2 heads garlic 1/2 ounce fresh organic Basil 1 pound linguine with omega-3 2 pounds peeled and deveined shrimp 1 teaspoon salt Directions:  Peel and chop garlic.  Chop roma tomatoes and put to side.  Remove stems form basil and chop leaves.  Put olive oil in large pan and saute garlic until just golden.  Add tomatoes and basil cook about 8 to 10 minutes on medium low heat.  Add Shrimp and salt cook until pink. Cook pasta according to directions to al dente and mix with sauce and shrimp.  Serve immediately.  I like to serve with a garnish of graded parmesan cheese. Quick Mediterranean Pasta Salad

1 box Whole Grain Linguine 1/2 pound of crumbled feta cheese 1 can of diced tomatoes with onion, basil and garlic Directions:  Cook pasta according to directions.  Drain.  Mix in diced tomatoes and cool.  Mix in feta cheese and serve chilled.  However I will say my son loved this still warm.  He thought it was awesome and ate two bowls.  This is so fast and you can trow together in a snap.  Green   Shellfish Pink  Gluten Yellow  Nuts Blue   Soy Red  Eggs Orange  Fish

Goat Cheese Pasta

This is a great pasta for lent.  This is one of my favorite pastas.  I love to make this and have the left overs for lunch. 1 lb penne pasta 11 oz. Goat cheese 3/4 cup chopped sun dried tomatoes 1 cup chicken stock 1 cup of cooked garbanzo beans 2 cloves of garlic Directions:  Cook pasta according to directions.   Reserve some of the pasta water. Use a skillet to make sauce.  Mince garlic and put in skillet with chicken stock bring to a low simmer.  Break up goat cheese and put in skillet, stir until all of the cheese is melted.  Add garbanzo beans so that they warm.  Toss sauce with pasta, add sun dried tomatoes.  Salt to taste.  Serve right away.  If sauce is to thick or it rests for too long before serving use pasta water to thin.  Enjoy! Artichoke Tortellini

I love cooking with Wine . I even enjoy wine clubs where you can find out more about wines and try ones you might not otherwise drink. I have read many articles saying that the healthiest women over 40 are women who drink one glass of red wine a day.  Below is one of my favorite recipes with white wine. 1/2 Cup Marinated Artichokes  1 1/2 Tbsp Capers  1 tsp Lemon Zest  2 Cloves Garlic  1/4 cup of white wine ( I used Sauvignon Blanc) 1 1/2 Tbsp Pine Nuts 1/4 cup of oil from the Marinated Artichokes 1/4 Cup Feta cheese 1 package all natural cheese and spinach tortellini by Barilla  Directions; Chop the Artichokes, Crush Garlic and chop, place in a pan.  Add oil and pine nuts saute until pine nuts turn slightly golden.  Reserve feta cheese until the end. Crock Pot White Lasagna

My Crock Pot is my friend this week. I am not feeling well and not up to cooking and cleaning this week. This is so easy I almost feel bad. However when my family runs in and is starving it will be hot a bubbly for them to eat.  I use a round crock pot.  2 jars store bought white sauce (all natural or organic) I used a four cheese. 1/2 cup of white wine 1 tsp garlic powder 1 package no boil lasagna noodles 24 oz Ricotta cheese (organic) 1 egg 1 tsp basil 8 oz mozzarella cheese 5 oz fresh grated parmesan cheese 1 lb cooked chicken breast shredded 8 oz sliced mushrooms   Directions,  combine white sauce, wine and garlic and set a side combine egg basil and cheeses (salt to taste) reserving some of the parmesan and mozzarella for the end. Put small amount of sauce at bottom of crock pot so that you have a thin layer but can not see the bottom. Break pasta to fit your crock pot and cover sauce, can overlap.
