Chicken Salad

I love this chicken salad; it is perfect for summertime.  Super easy.  All you need to start is a rotisserie chicken to get started,  no cooking necessary, and you have a refreshing summer dish ready to go in no time.  My husband loves this, so it's a quick go to on the weekends.  Makes 4 servings  carbs 8.9 protien 38.7 1/2 rotisserie chicken 2 hard-boiled eggs 1 small red onion diced 1 tsp fresh cilantro 1 cup mayonnaise 2 stalks celery diced 4 tbsp frozen peas thawed Directions Remove chicken meat from bones and chop.  Place chicken in a bowl.  Peel hard boiled eggs and chop, add egg and onion to the bowl.  Chop fresh cilantro and add to bowl. Add mayonnaise and celery.  Use an electric mixer and to mix everything.  Once incorporated, add peas and give another stir so that the peas are spread out through the salad.  Chill in refrigerator until ready to eat.  Serve as a sandwich, with crackers or in lettu...

White Wine Chicken

3 boneless skinless chicken breast  4 ounce prosciutto salt and white  pepper to taste 1/2 cup of wine 1/4 of a medium yellow onion 1/2 cup of milk  1 teaspoon of flour one box of penne pasta Directions:  cook this in a crock pot. Put the chicken in the crock pot, cut up the prosciutto and add.    Puree the onion and use some of the wine to get it smooth (so the kids don’t see the onion) add rest of wine, puree, salt and white pepper to chicken and cook 6 hours on low. Remove and  shred chicken. Boil penne to al dente.   Add milk and flour to sauce left in crock pot. Chicken Saltimbocca

This is really a simple and a very flavorful chicken.  I made it a little more kid friendly. 4 boneless skinless Hormone Free Chicken Breast 1 teaspoon of ground sage salt and pepper to taste  4 1/4 inch thick slices of havarti cheese 4 thin slices of prosciutto Directions:  Take each chicken breast and season with salt and pepper on each side.  place in a baking dish and sprinkle each breast with 1/4 of a teaspoon of ground sage.  place a slice of cheese on top of each breast and then cover with slice  of prosciutto.  Bake in oven at 325 degrees for about 20 minutes or until chicken in cooked through.  Enjoy this was a big hit. Artichoke Chicken

I finally got a picture. My family loved the smell and as soon as I put it on a plate they ate it up.  I only got one bite of the chicken because the kids asked for mine when they finished their portion. They ate so fast they were asking for more before I even made it to the table.  Ok on to the recipe.   1 Can of artichoke bottoms 1 teaspoon adobe seasoning 1/2 teaspoon salt 1/4 cup olive oil 1/2 cup white wine 1/2 teaspoon garlic powder 4 boneless skinless chicken breast Directions:  cut the artichokes into quarters.  Put olive oil in skillet and place chicken in skillet.  Put in artichokes in skillet.  Pour wine in skillet.  Sprinkle 1/2 adobe, salt, and garlic on chicken.  Cover skillet and cook five minutes on medium heat.  Flip chicken and sprinkle the rest of seasoning on chicken.  Return cover and cook five more minutes.  Uncover and cook additional few minutes until chicken is done and se...

Crock Pot White Lasagna

My Crock Pot is my friend this week. I am not feeling well and not up to cooking and cleaning this week. This is so easy I almost feel bad. However when my family runs in and is starving it will be hot a bubbly for them to eat.  I use a round crock pot.  2 jars store bought white sauce (all natural or organic) I used a four cheese. 1/2 cup of white wine 1 tsp garlic powder 1 package no boil lasagna noodles 24 oz Ricotta cheese (organic) 1 egg 1 tsp basil 8 oz mozzarella cheese 5 oz fresh grated parmesan cheese 1 lb cooked chicken breast shredded 8 oz sliced mushrooms   Directions,  combine white sauce, wine and garlic and set a side combine egg basil and cheeses (salt to taste) reserving some of the parmesan and mozzarella for the end. Put small amount of sauce at bottom of crock pot so that you have a thin layer but can not see the bottom. Break pasta to fit your crock pot and cover sauce, can overlap.
