Stuffed and Grilled Mushrooms

I have been eating mainly vegetables for more than year now and my kids are starting to eat a lot more veggies.  I make a couple of veggie sides each night to choose from.  This is an easy option that you can prep ahead of time and cook as soon as you walk in the door.  So you can get your family to the table faster. 5.3 oz garlic and basil goat cheese 1 tbs chopped sun-dried tomatoes 8 mushroom caps Directions: Mix goat cheese and sun dried tomatoes together.  fill each mushroom cap.  Grill on upper rack of barbecue grill about 8 minutes.  They need to stay firm so they keep the filling.  Serve hot. Happy Eating!

French Bread Pizza Your Way

Recipe was featured in The France Daily   This great for sleep overs or afternoon hanging out. 1 jar all natural pizza sauce  1 loaf of whole grain french bread 1 cup shredded mozzarella cheese  1 cup shredded provolone cheese 1 can sliced black olives 1 package sliced pepperoni 1 cup cooked shredded chicken 1 cup sliced peppers 1 cup sliced mushrooms 1 cup chucked pineapple Directions:  Cut loaf of french bread length wise. Then cut each half  into 6 inch lengths.  Hand these out to the kids.  Lay out all the ingredients like a buffet and let kids make their own pizza masterpiece.  Broil in oven until just golden and serve hot.  The kids always have fun with this one.   Image courtesy of [image creator name] / FreeDigitalPhotos.net

Spinach Salad

 This makes a very nice simple side salad. 15 oz of organic spinach 3 tbsp blue Cheese 1/4 cup sliced almonds 1/4 cup of dried cherries Dressing; 1 clove garlic 2 tsp honey 2 tsp spicy brown mustard 2 tbsp Raspberry vinegar 2 tbsp balsamic vinegar 4 tbsp olive oil Directions;  Place spinach,  Blue cheese, almonds and cherries together on salad plate.  Dressing:  grate garlic and mix dressing ingredients together.  I like to put the  dressing on the side so that each person can adjust the amount they want . Portobello Mushroom Burger

This recipe is for one but you can multiply to make as many as you need. 1 large portobello mushroom 1 tablespoon sun-dried tomatoes 3 tablespoons feta cheese 1 teaspoon white balsamic vinaigrette 1 organic wheat hamburger bun Directions:   Wash off portobello and remove stem.  Place sun-dried tomatoes inside and top with feta cheese.  Grill on medium heat for about 8 minutes.  Place hamburger bun on grill to toast.   When Mushroom is done remove and drizzle vinaigrette over.  Place on toasted bun and serve.  I keep all the ingredients on hand so I can make these up whenever everyone else wants real burgers. Honeyed Carrots

4 cups diagonally cut organic carrots 2 tbs organic butter 3 tbs organic honey Directions:  Put carrots in skillet with butter on low heat.  When butter is melted add honey.  Stir until carrots are thoroughly coated.  We like out carrots hot but still crisp if you like them softer cook longer. Italian stuffing

1 1/2 bitty boule sour dough bread 2 tsp dried onion 1 can organic diced tomatoes 1/2 tsp garlic powder 1 tsp dried basil 1/2 tsp dried thyme 1 tsp chicken soup base stock 1 cup water 1 cup marinated quartered artichoke hearts Everyone loves this stuffing.  Its super easy. Directions  Tear bread up into chunks and put to the side.  Place the remainder of ingredients into a sauce pan and bring to a boil.  Stir in bread.  remove from head and place in a greased baking dish.  Back in the oven for 20 minutes at 350.  make sure the top is browned and crunchy. Cranberry Sauce

Love homemade sauce and for a couple of years I have been working with different recipes and trying to come up with the perfect sauce.  Last year I made one with out cooking this cranberries.  This years sauce is a cooked sauce give it a try and let me know what you think.  1 bag cranberries 12 ounce  4 tbsp sugar 1 cup orange juice 1 tsp lemon juice zest from one orange directions In a small pot place cranberries, sugar, orange juice, and lemon juice.  Bring to a simmer on med heat and stir.  let this simmer until cranberries pop.  I like my sauce less chunking so I use my hand mixer to blend it a bit more.  Stir in orange zest and let cool. Breakfast burrito

My new breakfast of champions!! I am now in love with this. My hubbs loved it too!! Four flour tortillas Half a bag of shredded hash browns. Olive oil spray 1 tsp adobe seasoning 1can black beans 1/4 cup chopped yellow onion 2 cloves garlic chopped 1/2 tsp cumin 1 tsp adobe seasoning 1 tsp olive oil 1 bay leaf Directions Easy tip is to keep bag of shredded potatoes in the refrigerator for faster cooking on school mornings. Spray skillet with olive oil. Add potatoes and seasoning. Stir and cook on med turning potatoes twice while cooking. In a small pot add olive oil and onions cook until translucent. Add remaining ingredients bring to a boil then turn down to low. Cook 5 more minutes. Take your flour tortillas at room tempature and layer potatoes and beans with most of the liquid drained as you scoop from the pot. My husband added some scrambled eggs to his. I liked it with out. Maple & Spice Pumpkin Seeds

Yum! I am really enjoying pumpkin carving this year!! Seeds from 1 med pumpkin 2 tbsp maple syrup 1 tsp cinnamon 1/2 tsp nutmeg 1 tbsp olive oil Directions Clean rinse and dry pumpkin seeds. Mix ingredients in separate bowl. Add seeds and completely coat all seeds. Preheat oven to 300 degrees. Line baking sheet with foil and spray with oil. Sweet & Spicy Pumpkin Seeds

We are carving pumpkins so I am trying out different recipes on each group of pumpkin seeds.  So much fun today!!  Pics are coming. This is the first batch. pumpkin seeds from a medium carving pumpkin 2 drops hot sauce 1 tbsp worcestershire sauce 1 tbsp honey 1/2 tsp salt 1 tbsp olive oil Directions Rinse pumpkin seeds of all pieces of pumpkin and place on paper towel to get some of the water off.  Once rinsed place in a bowl.  In a separate bowl place mix the remainder of ingredients with a whisk.  Toss your sauce with pumpkin seeds and place on a foil lined baking sheet.  Spread out seeds as evenly as possible.   Bake in a pre-heated oven at 300 degrees for 45 mins or until crispy. Pineapple Dessert

This is so simple but so good.  And really pretty healthy.  Pineapple is a great aid in digestion.   4 cups Cubed Pineapple 4 tablespoons Carmel Sauce ingredients for carmel sauce 6 tbsp organic butter 1 tsp frangelico 1 cup sugar 1/4 cup heavy whipping cream Directions: put a cup of pineapple in each dish.  So you have four servings.  Place sugar in a sauce pan on med to high head.  Using a wire whisk keep sugar moving so that is melts evenly.  Once all sugar is melted and amber in color.  Add butter.  Once butter is melted and fully incorporated.  remove form heat. Add Frangelico let cool a little and add in the milk this just thins the sauce out so that it drizzles better.  Drizzle warm sauce over pineapple and enjoy! Shrimp Fettuccine

2 cloves garlic 2 tbsp organic butter melted 1 lb prosciutto 1 cup frozen organic peas 1 box Barilla plus Fettuccine 1/2 cup organic butter softened  1 cup grated parmesan cheese  8 oz carton organic sour cream 1 lb. uncooked peeled and deveined shrimp 1/2 tsp white pepper Directions;   Cook fettuccine according to  package. Drain well.  While pasta is cooking  Crush garlic and saute in 2 tablespoons of butter in a medium skillet. Slice prosciutto into thin strips and put in to skillet. Add peas and shrimp and saute for 3 to 5 minutes until shrimp is pink through.  Add remaining butter sour cream and parmesan cheese. Toss together until all of the pasta is coated. Greek village salad

This so easy. I have been making it for some time, my husband loves it. One night a friend from Greece was over and said in Greece they call it village salad. One package pesticide free grape tomatoes. 1 cucumber 1/4 cup feta cheese 1 tbsp olive oil 1 tbsp white wine vinager Salt and pepper to taste Cut tomatoes in half. Bubble Juice

Bubble juice is so much fun my daughter loves this especially when she is not feeling well.   1 cup organic small Tapioca pearls Bottle of Juice.   Really large straw Directions: Cook tapioca according to directions. Let cool and rinse thoroughly.  In a tall clear glass put two tablespoons of tapioca and favorite Juice.  We like pomegranate and juices that are a blend of fruit and veggies. Spaghetti and Meatballs

When it comes to this recipe keep it simple.  This is a great fast recipe, using store bought meatballs.  We are so busy these days that few of us have time to make homemade meatball I can post a homemade recipe later, but this recipe is for families on the go.   2 Cans organic diced tomatoes 2 lbs cooked hormone and antibiotic free turkey meatballs 2 Bay leaves 1 1/2 teaspoon dried organic basil 1 teaspoon organic garlic powder 1 teaspoon organic  sugar 1/2 teaspoon  sea salt 1 lb spaghetti noodles with protein and omega-3 1 tablespoon organic olive oil Directions:  puree the tomatoes, mix ingredients together (except for noodles) and place in crock pot or slow cooker with meatballs.  Put sauce on low and cook for 2 to 3 hours.  You can get this together before you go to pick up the kids and when you are done with after school activities dinner is almost too.  Cook pasta according to directions.  Put a sal...
