Stuffed and Grilled Mushrooms

I have been eating mainly vegetables for more than year now and my kids are starting to eat a lot more veggies.  I make a couple of veggie sides each night to choose from.  This is an easy option that you can prep ahead of time and cook as soon as you walk in the door.  So you can get your family to the table faster. 5.3 oz garlic and basil goat cheese 1 tbs chopped sun-dried tomatoes 8 mushroom caps Directions: Mix goat cheese and sun dried tomatoes together.  fill each mushroom cap.  Grill on upper rack of barbecue grill about 8 minutes.  They need to stay firm so they keep the filling.  Serve hot. Happy Eating!

Spinach Salad

 This makes a very nice simple side salad. 15 oz of organic spinach 3 tbsp blue Cheese 1/4 cup sliced almonds 1/4 cup of dried cherries Dressing; 1 clove garlic 2 tsp honey 2 tsp spicy brown mustard 2 tbsp Raspberry vinegar 2 tbsp balsamic vinegar 4 tbsp olive oil Directions;  Place spinach,  Blue cheese, almonds and cherries together on salad plate.  Dressing:  grate garlic and mix dressing ingredients together.  I like to put the  dressing on the side so that each person can adjust the amount they want . Portobello Mushroom Burger

This recipe is for one but you can multiply to make as many as you need. 1 large portobello mushroom 1 tablespoon sun-dried tomatoes 3 tablespoons feta cheese 1 teaspoon white balsamic vinaigrette 1 organic wheat hamburger bun Directions:   Wash off portobello and remove stem.  Place sun-dried tomatoes inside and top with feta cheese.  Grill on medium heat for about 8 minutes.  Place hamburger bun on grill to toast.   When Mushroom is done remove and drizzle vinaigrette over.  Place on toasted bun and serve.  I keep all the ingredients on hand so I can make these up whenever everyone else wants real burgers. Honeyed Carrots

4 cups diagonally cut organic carrots 2 tbs organic butter 3 tbs organic honey Directions:  Put carrots in skillet with butter on low heat.  When butter is melted add honey.  Stir until carrots are thoroughly coated.  We like out carrots hot but still crisp if you like them softer cook longer. Simple Avocado

1 avocado balsamic vinegar olive oil sea salt grinder Directions;  cut avocado in half and remove pit.  Remove peel and slice in bite size pieces. Arrange on a plate and drizzle with balsamic vinegar and olive oil , salt to taste with your sea salt grinder . Shrimp Fettuccine

2 cloves garlic 2 tbsp organic butter melted 1 lb prosciutto 1 cup frozen organic peas 1 box Barilla plus Fettuccine 1/2 cup organic butter softened  1 cup grated parmesan cheese  8 oz carton organic sour cream 1 lb. uncooked peeled and deveined shrimp 1/2 tsp white pepper Directions;   Cook fettuccine according to  package. Drain well.  While pasta is cooking  Crush garlic and saute in 2 tablespoons of butter in a medium skillet. Slice prosciutto into thin strips and put in to skillet. Add peas and shrimp and saute for 3 to 5 minutes until shrimp is pink through.  Add remaining butter sour cream and parmesan cheese. Toss together until all of the pasta is coated. Simple Green Beans

2 cups frozen Organic Green Beans olive oil spray 2 tsp organic butter salt to taste Directions:  spray skillet with olive oil and saute green beans when almost tender add butter and salt. Spaghetti and Meatballs

When it comes to this recipe keep it simple.  This is a great fast recipe, using store bought meatballs.  We are so busy these days that few of us have time to make homemade meatball I can post a homemade recipe later, but this recipe is for families on the go.   2 Cans organic diced tomatoes 2 lbs cooked hormone and antibiotic free turkey meatballs 2 Bay leaves 1 1/2 teaspoon dried organic basil 1 teaspoon organic garlic powder 1 teaspoon organic  sugar 1/2 teaspoon  sea salt 1 lb spaghetti noodles with protein and omega-3 1 tablespoon organic olive oil Directions:  puree the tomatoes, mix ingredients together (except for noodles) and place in crock pot or slow cooker with meatballs.  Put sauce on low and cook for 2 to 3 hours.  You can get this together before you go to pick up the kids and when you are done with after school activities dinner is almost too.  Cook pasta according to directions.  Put a sal...

Cream Cheese Chicken Burritos

16 oz. Cream Cheese  20 oz. cooked boneless skinless chicken breast shredded 6 drops of hot Sauce 1/2 cup of shredded 4 cheese mexican blend Salt to taste 4 large tortilla  Sauce  1/2 cup sour cream  1/2 cup of shredded 4 cheese mexican blend Directions: Mix cream cheese, chicken, hot sauce, cheese, and salt place 1/4 of mixture in each tortilla.  Fold tortilla up and place seam side down in a greased casserole dish. bake at 370 degrees for 15 minutes uncovered  mix sour cream and cheese and place on top of burritos, continue baking for another 5 minutes Green   Shellfish Yellow  Nuts Blue   Soy Red  Eggs Orange  Fish

White Wine Chicken

3 boneless skinless chicken breast  4 ounce prosciutto salt and white  pepper to taste 1/2 cup of wine 1/4 of a medium yellow onion 1/2 cup of milk  1 teaspoon of flour one box of penne pasta Directions:  cook this in a crock pot. Put the chicken in the crock pot, cut up the prosciutto and add.    Puree the onion and use some of the wine to get it smooth (so the kids don’t see the onion) add rest of wine, puree, salt and white pepper to chicken and cook 6 hours on low. Remove and  shred chicken. Boil penne to al dente.   Add milk and flour to sauce left in crock pot. Fruit Kabobs

Keep junk food kids busy with this tasty fun while you get dinner ready. Put fresh fruit on a plate or in a bowl   cubed honey dew cubed cantaloupe  organic grapes pineapple cubed  organic strawberries green trimmed off and cut in half bamboo skewers  Directions:  Give the  ingredients  to the kids for imagination and  taste buds to enjoy.  Mix it up and add or subtract the fruits your kids really like. Goat Cheese Apps

I love to put this out when friends are coming to hang out.  It looks pretty and tastes great. 1 log of goat cheese 1 tbsp minced sun dried tomatoes 1 tbsp minced fresh dill salt grinder  pepper grinder Directions:  Slice goat cheese into 4 slices.  Roll two slices in sun dried tomatoes and arrange on plate.  Roll two slices in dill and arrange on plate.  Sprinkle with a small amount of salt and pepper.  Serve with whole wheat crackers. Aunt Glady's Camarones Pasta

This is one of my favorites my aunt always makes this for me when I see her.   2/3 cup organic extra virgin olive oil 6 organic roma tomatoes 2 heads garlic 1/2 ounce fresh organic Basil 1 pound linguine with omega-3 2 pounds peeled and deveined shrimp 1 teaspoon salt Directions:  Peel and chop garlic.  Chop roma tomatoes and put to side.  Remove stems form basil and chop leaves.  Put olive oil in large pan and saute garlic until just golden.  Add tomatoes and basil cook about 8 to 10 minutes on medium low heat.  Add Shrimp and salt cook until pink. Cook pasta according to directions to al dente and mix with sauce and shrimp.  Serve immediately.  I like to serve with a garnish of graded parmesan cheese.
