Healthy Burrito

Ranched Up Mock Mashed Potatoes

Trying to get your kids to eat Cauliflower?  This is the perfect way.  My kids never know they are eating Cauliflower.  This is a great recipe my kids have eaten this for years with no complaints.  1/3 cup organic Ranch dressing 1 head  cauliflower 1 small organic yellow onion 1/4 teaspoon salt 2 cloves Garlic 2 small organic potatoes 2 tablespoons organic salted butter Directions;  Chop and rinse cauliflower, peel and chop onion, peal garlic, peel and chop potatoes.  Place your veggies in a pot of boiling water.  Add salt reduce to a low boil and cook for 15 minutes.  Drain water and add in ranch dressing and butter.  Use a mixer or hand blender to mix everything until smooth.  Sevre them up the kids will love them. I Have A Problem

 I am writing something other than a recipe today.  Because I wanted to let my readers know about my problem.  The pictures I post, most of the time are my own of the food I make. I try to post something I have recently made at home so, I can give my readers a fresh picture of my food.  So the dishes you see are my dishes.  I have two small sets that I have mixed together. After many years of being married, my dishes from when we got married are very few.  So when we made this last move I bought some dishes that were inexpensive but I really liked.  However these dishes get hot when I reheat food in the microwave.  So last year my mother-in-law gave me a nice gift card for my birthday to a department store.  So I used that to buy a really nice set of dishes.  They are supposed to be microwave and dishwasher safe. One day warming a piece of pizza in the microwave I hear a pop.  I open the microwave and the dish has cracked all the way across. It was only in the microwave 30 seconds.

Corn Chowder

Ok this is super easy. Since I was sick last week.  I needed a mommy day off meal and this fits the bill. I ate this when I was a kid and now my kids eat a more organic version. When my son was little he called it hot dog soup.  We still laugh because he thought the Kielbasa was hot dogs. 2 cans organic potato soup 1 can organic corn 1 can cream corn 1 package hormone and antibiotic free Kielbasa  sausage 1/2 cup sour cream organic 1 cup organic milk 1/2 cup shredded Monterey jack cheese 1 tsp paprika 1/2 tsp white pepper 1/2 tsp garlic powder Directions This super easy!  Cut sausage up in cubes.  Throw everything in crock pot. Stir. Let cook on low for an hour or two.  That's it mommy just gave her self a day off. Green   Shellfish Yellow  Nuts Blue   Soy Red  Eggs Orange  Fish

Taco Night

I know Taco night is So easy.  I set mine up like a taco bar.  My kids love taco night, they request it since everyone gets a taco just the way they want. Make Bean Dip for taco night. 1 lb shrimp 1 lb ground sirloin 2 packages your favorite taco seasoning (preservative free) 1 package shredded mexican blend cheese head of organic iceberg lettuce 2 organic tomatoes 2 Avocados 1 jar your favorite salsa (preservative free) 6 or more taco shells tortilla chips 1 container sour cream organic I little side note I have found some great seasonings, salsas and taco shells that are made local and are preservative free.  Look around your grocery, you may find similar items. Directions Put beef and 1 package seasoning in skillet and break up while cooking until all meat is browned.  In another skillet put your cleaned shrimp with shell and tail removed.  Add other package of seasoning to shrimp and cook until shrimp are pink.  Heat taco shells in oven according to directions.

Guacamole

This is a super easy kid friendly Guacamole that my kids make themselves. 1 avocado salt grinder 1 lime  Take one avocado cut in half and remove pit, then peal skin off.  Place avocado pieces in mortar give the kids the petal and let them pound a squish away.  Cut lime into wedges.  Ok now the fun part have the kids squeeze in some lime juice and add salt.  Have chips handy so the kids can taste their creation and keep adding salt and lime juice until they get it just the way they like.   Remember add in little amounts at a time. Bean Dip

Yes I know bean dip is so simple.  But I thought about it because my kids were requesting crazy stuff this weekend.  Bean dip was one of them and there are great ways to use the leftovers.   So today I post my bean dip and tomorrow you can find a great recipe to make using your bean dip. added some avocado for garnish 1 can refried beans look for vegetarian or fat free 2 tbsp organic sour cream 1/4 cup shredded cheese mexican blend ( always have this stuff on hand) ( organic preferably) 1/4 cup favorite salsa Directions;  Heat on stove top at medium heat. Stir occasionally until everything is incorporated and heated through. You should no longer see any bits of cheese.  Serve with chips and keep watching for my other fun ways to use your bean dip.  This is a great way to get protein in your kids. Crock Pot White Lasagna

My Crock Pot is my friend this week. I am not feeling well and not up to cooking and cleaning this week. This is so easy I almost feel bad. However when my family runs in and is starving it will be hot a bubbly for them to eat.  I use a round crock pot.  2 jars store bought white sauce (all natural or organic) I used a four cheese. 1/2 cup of white wine 1 tsp garlic powder 1 package no boil lasagna noodles 24 oz Ricotta cheese (organic) 1 egg 1 tsp basil 8 oz mozzarella cheese 5 oz fresh grated parmesan cheese 1 lb cooked chicken breast shredded 8 oz sliced mushrooms   Directions,  combine white sauce, wine and garlic and set a side combine egg basil and cheeses (salt to taste) reserving some of the parmesan and mozzarella for the end. Put small amount of sauce at bottom of crock pot so that you have a thin layer but can not see the bottom. Break pasta to fit your crock pot and cover sauce, can overlap. Continue layers with cheese mix, then pasta, sauce, mushrooms,

Shrimp and Potato Soup

2 cups of water 1/4 large chopped onion 1 cup chopped organic carrot 1 can evaporated milk (organic preferred) 1/2 pound fresh peeled shrimp 1 tbsp chicken base organic 3 large red skin golden potatoes organic 1/2 teaspoon of white pepper 1 teaspoon of sea salt 1 teaspoon butter organic 1 teaspoon olive oil organic directions:  saute onion and carrots with  olive oil until onions are translucent.  puree onion and carrots with 1/2 cup of water and chicken base.  In a large pot put remainder of water and puree mix.  If your child does not like the peel on the potato, peel and dice.  Put potatoes in soup base and bring to a boil, reduce to simmer for 10 minutes.  Saute shrimp in a skillet with butter and half of the salt and pepper.   When shrimp are pink add to soup base.  Add the remainder of the salt and pepper and evaporated milk. Let simmer for another couple of minutes and serve. Pink  Gluten Yellow  Nuts Blue   Soy Red  Eggs Orange  Fish

Mango Pineapple Lassa

I am so short on time today with no time to cook.  So I whipped up a Lassa for my lunch.  My friend is from india and they call smoothies Lassa.  She sent me a recipe and even bought me a can of mango pulp.  Which I love, However it has so much sugar and I am really trying to keep my sugar intake low.  So this is my low sugar recipe with pineapple. I bought fresh fruit at the grocery already cut in spears to make it easier.  That way I can make this on the fly. 2 spears fresh mango 2 spears fresh pineapple 2 pods of Green Cardamon 2/3 cup of  plain greek yogurt (organic preferred) handful of ice In a blender put in your mango, pineapple and ice.  Open cardamon pods and take out the seeds.  Smash all the seeds in a mortar and pestle. Add to blender.  Blend thoroughly, stopping to push everything down. Add your yogurt and pulse a couple of times.  Now it is ready to enjoy.  This will be thick, so you might want a straw. If you want it sweet add some honey.  I liked it not bein

Crescent Casserole

I made this up Saturday. I had some crescents still laying around from the week and need to use them up.  What baked up golden was a family hit. 8 x 8 glass baking dish three large crescents from the bakery 1 package organic cream cheese 4 ounces of 5 cheese Italian blend shredded 5 eggs from chickens with out hormones 3/4 cup of milk organic 5 dashes hot sauce 1/2 tsp basil salt to taste 1/4 tsp nutmeg Directions Tear crescents into pieces and spread around baking dish Soften cream cheese. I pop it in the microwave for 30 seconds.  Mix all the ingredients together with the cream cheese until thoroughly integrated. Pour mixture over torn crescents.  Use a fork and push the crescents  into the mixture so the soak up the liquids.  Cover baking dish with foil.  Bake in a pre heated oven at 325 for 1 hour, during the last 10 minutes remove foil so the top can turn golden. Cut into serving size squares and serve with fresh fruit.  This is a great way to start your day.  You

Me Time With A Purpose

This weekend I thought hard about what to write today.  I thought about the great breakfast casserole I made for my family this weekend.  I thought about tea's.  As I thought on Sunday and flipped through my magazines, I thought about how much I was enjoying my bit of ME time.  I get up earlier than my family most of the time, we have puppies that rise early.  So during my me time I went through magazines.  Old ones that have stacked up around my house.  I know it's a small thing.  However I got out some file folders, labeled them and ripped out articles I found of interest. Recipes, one of my folders, I want to try out on my family. Garden ideas, I love working in the garden and not just mine but my in-laws as well. I put sticky notes on the torn out pages so I would remember what I was thinking at the time. website, these were pages that gave me inspiration of what to write to my followers.  Again I used my sticky notes. Decor Ideas, I am always working on my house.  

National Bean Day

Today is national Bean Day In honor I  am posting Aunt Gladys'  Cuban black Beans 1 can seasoned black beans 1 tsp olive oil dash of Garlic powder dash of cumin  salt to taste Directions; mix ingredients together in a pot and let simmer for 5 minutes.  Serve over rice.
