German Potatoes

I have no idea why these are called German. I tasted a recipe years ago, and someone called them german potatoes.  I created the potatoes in college as a dinner staple.  This is a delicious take on potatoes, and my family loves this flavorful dish so much. Fall Off The Bone Ribs

This is so easy and your family will love them. We had no leftovers.  These are slow cooked and so easy it feels like you are cheating. Get your crock pot out and get ready to impress your family.  1 1/2 rack of pork ribs  1 1/2 tbsp your choice bbq rub  1/2 cup your choice bbq sauce.  1. Cut your ribs so that they will fit in your crock pot. I just cut mine in half.  2. Cover your ribs with rub. 3.  Place ribs in crock pot.  4. I cooked my ribs on high for 4 1/2 hours if you need to cook them all day while you are out cook them on low.  5. Take out of crock pot and put in a baking dish bone side down. Use tongs and use caution so your meat does not fall off the bones.  6. Cover meat side with bbq sauce using a basting brush.  7. Put in oven and broil on high five minutes.  8. Serve with sides and enjoy the compliments from your family. It was a great dinner with my family.  Happy Eating. 

Stuffed and Grilled Mushrooms

I have been eating mainly vegetables for more than year now and my kids are starting to eat a lot more veggies.  I make a couple of veggie sides each night to choose from.  This is an easy option that you can prep ahead of time and cook as soon as you walk in the door.  So you can get your family to the table faster. 5.3 oz garlic and basil goat cheese 1 tbs chopped sun-dried tomatoes 8 mushroom caps Directions: Mix goat cheese and sun dried tomatoes together.  fill each mushroom cap.  Grill on upper rack of barbecue grill about 8 minutes.  They need to stay firm so they keep the filling.  Serve hot. Spinach Salad

 This makes a very nice simple side salad. 15 oz of organic spinach 3 tbsp blue Cheese 1/4 cup sliced almonds 1/4 cup of dried cherries Dressing; 1 clove garlic 2 tsp honey 2 tsp spicy brown mustard 2 tbsp Raspberry vinegar 2 tbsp balsamic vinegar 4 tbsp olive oil Directions;  Place spinach,  Blue cheese, almonds and cherries together on salad plate.  Dressing:  grate garlic and mix dressing ingredients together.  I like to put the  dressing on the side so that each person can adjust the amount they want . Simple Avocado

1 avocado balsamic vinegar olive oil sea salt grinder Directions;  cut avocado in half and remove pit.  Remove peel and slice in bite size pieces. Arrange on a plate and drizzle with balsamic vinegar and olive oil , salt to taste with your sea salt grinder . Bubble Juice

Bubble juice is so much fun my daughter loves this especially when she is not feeling well.   1 cup organic small Tapioca pearls Bottle of Juice.   Really large straw Directions: Cook tapioca according to directions. Let cool and rinse thoroughly.  In a tall clear glass put two tablespoons of tapioca and favorite Juice.  We like pomegranate and juices that are a blend of fruit and veggies. Fruit Kabobs

Keep junk food kids busy with this tasty fun while you get dinner ready. Put fresh fruit on a plate or in a bowl   cubed honey dew cubed cantaloupe  organic grapes pineapple cubed  organic strawberries green trimmed off and cut in half bamboo skewers  Directions:  Give the  ingredients  to the kids for imagination and  taste buds to enjoy.  Mix it up and add or subtract the fruits your kids really like.
