Artichoke Tortellini


I love cooking with Wine. I even enjoy wine clubs where you can find out more about wines and try ones you might not otherwise drink. I have read many articles saying that the healthiest women over 40 are women who drink one glass of red wine a day.  Below is one of my favorite recipes with white wine.

1/2 Cup Marinated Artichokes 
1 1/2 Tbsp Capers 
1 tsp Lemon Zest 
2 Cloves Garlic 
1/4 cup of white wine ( I used Sauvignon Blanc)
1 1/2 Tbsp Pine Nuts
1/4 cup of oil from the Marinated Artichokes
1/4 Cup Feta cheese
1 package all natural cheese and spinach tortellini by Barilla 

Directions; Chop the Artichokes, Crush Garlic and chop, place in a pan.  Add oil and pine nuts saute until pine nuts turn slightly golden.  Reserve feta cheese until the end. Add remaining ingredients warm while you Cook tortellini according to directions.  Drain tortellini and toss with sauce and add Feta.  Enjoy this was a huge hit with friends.

Potato Breakfast Cassarole

I made this over the fourth of July,  It received such a good response from my Instagram story that I am posting it today.  I know, I am a day late posting with the holiday. Rice! Is it in your pantry?
