This is one of my favorites my aunt always makes this for me when I see her.
2/3 cup organic extra virgin olive oil
6 organic roma tomatoes
2 heads garlic
1/2 ounce fresh organic Basil
1 pound linguine with omega-3
2 pounds peeled and deveined shrimp
1 teaspoon salt
Directions: Peel and chop garlic. Chop roma tomatoes and put to side. Remove stems form basil and chop leaves. Put olive oil in large pan and saute garlic until just golden. Add tomatoes and basil cook about 8 to 10 minutes on medium low heat. Add Shrimp and salt cook until pink. Cook pasta according to directions to al dente and mix with sauce and shrimp. Serve immediately. I like to serve with a garnish of graded parmesan cheese.
