Green Bean Casserole

This is not you regular green bean recipe. My mushroom soup I make from scratch.  Because we keep it preservative free so our holiday are sicky free.

Mushroom soup

12 onces of sliced mushrooms
2 tbsp butter
1 tbsp dried onion
2 cloves garlic
3 tbsp flour
1tsp chicken stock base
3 cups milk
salt and pepper to taste

4 cups of frozen green beans thawed
 fried onion topping.

On medium heat. place butter mushrooms and onions in sauce pan.  once butter is melted add garlic and flour. Stir until crumbly. Add chicken stock base. Add milk slowly while stirring so you don't get lumps. Add salt and pepper.  Remove from heat.  Place green beans in sauce pan and stir.  Place everything in a baking dish, I like a square dish.  bake in the oven uncovered for 30 to 40 minutes at 350.  Top with fried onions, place back in oven for a few minutes so that onions get brown.  Serve this is a huge hit and no left over will be in site.

Maple & Spice Pumpkin Seeds

Yum! I am really enjoying pumpkin carving this year!!

Seeds from 1 med pumpkin
2 tbsp maple syrup
1 tsp cinnamon
1/2 tsp nutmeg
1 tbsp olive oil

Clean rinse and dry pumpkin seeds. Mix ingredients in separate bowl. Add seeds and completely coat all seeds. Preheat oven to 300 degrees. Line baking sheet with foil and spray with oil. Spread pumpkin seeds out evenly on foil and bake until crispy about 45 mins. Enjoy your sweet treat!!

Super Easy Blueberry Muffins

I love to make things that are easy when the kids are home so I can spend more time with them.  This is just the recipe.

1 package preservative free blueberry muffin mix
2/3 cups of water
1/2 cup of Ricotta cheese
2 eggs

Directions: If your mix has canned blueberries.  Put them to the side.  Mix all other ingredients together.  When everything is incorporated fold in blueberries.  Fill your muffin cups 3/4 of the way full. Bake at 350 for 16-18 minutes.  Enjoy your family time.
