Spinach mushroom enchilada

I was snowed in on day two. I was wanting to make a veggie dish so I looked around the kitchen and came up with this enchilada dish with a creamy cheese sauce. I was little worried this was going to be a bust. But I was really pleased with the flavor

1 cup dried mushrooms
1/2 cup white wine
1cup water
I package of frozen spinach with light cream sauce
1/2 med onion chopped
1/2 chili powder
1 package cream cheese
1/4 cup favorite salsa
1/4 shredded Mexican cheese blend
3 small soft tortillas
Directions
In a skillet put mushrooms wine and water. Bring to a boil and then reduce to a simmer until all liquid is reduced. About 15 mins.
Place cream cheese, shredded cheese and salsa in a bowl and microwave for 1 minute. Stir microwave again 1 minute. Stir and put to side.
When mushrooms are ready add chopped onion, spinach and chili powder. Let all of this incorporate and heat all the way through. When onion is translucent place mixture in tortilla and wrap up. Place in a dish lightly sprayed with olive oil. Top with you cream cheese sauce. I used about half the sauce and saved the rest for later. Bake in the over at 350 for about 10m mins. Enjoy!!

Taco Night

I know Taco night is So easy.  I set mine up like a taco bar.  My kids love taco night, they request it since everyone gets a taco just the way they want. Make Bean Dip for taco night. 1 lb shrimp 1 lb ground sirloin 2 packages your favorite taco seasoning (preservative free) 1 package shredded mexican blend cheese head of organic iceberg lettuce 2 organic tomatoes 2 Avocados 1 jar your favorite salsa (preservative free) 6 or more taco shells tortilla chips 1 container sour cream organic I little side note I have found some great seasonings, salsas and taco shells that are made local and are preservative free.  Look around your grocery, you may find similar items.
