Events and Brussel Sprout Gratin Live

Today is a little different post. I was on fox4 kc this morning.  I made the Brussel Sprout Gratin on live tv. Zesty Summer Salad

I love this salad! It is super easy to make, with bright summer flavors, you will find yourself wanting more.  Sometimes I feel no one wants a recipe so simple.  However, someone asked me the other day about my recipes.  They wanted to know if my cooking was approchable.  She was worried that because of my photos she would not be able to make myfood.  I reassured her that I try to make food that anyone can cook.  I want your kids to cooking in the kitchen with you.  I write recipes for people who are new cooks not just seasoned kitchen aficionados. Makes 2 servings Carbs 10.7g   Protein  2.9g Salad Base 1 head Romain lettuce rinsed and chopped 1 avocado 4 halves sundried tomatoes Dressing 2 tbsp plain greek yogurt Juice of 1/2 lime Lime zest from half lime 1/2 tsp fresh cilantro 1/4 tsp sriracha or to taste salt to taste Place lettuce in a bowl.  Peel avocado, deseed, peel, and chop. Matcha Chia Pudding

I love chia pudding for breakfast in the morning.  I make it the night before so it is ready and waiting for me when I wake up.  Over the years I have made a variety of flavors.  I love the bold green of the matcha to get the day started.  Makes 2 Servings  17.3g  Carbs     7.5g  Protein 1 1/2 cup almond milk 1/4 cup chia seeds 2 tsp honey 1 1/2 tsp matcha 1/2 tsp vanilla Directions Using a mason jar with a lid.  Place all ingredients in a mason jar.  Place lid on tight. Shake vigorously.  Put in the refrigerator for 10 minutes.  Remove and shake again. Replace in the refrigerator and let sit in the refrigerator for 2 hours or overnight.  Top with your favorite fruit.  The fruit was not counted in the carb or protein counts. Ebook Hardback

Caesar Brussel Sprouts

This is a Salad that is so popular in my family that I never get to have any of the leftovers. If my aunt is around, she will take all the leftovers of this salad with her.  I am actually making this tomorrow, with teenagers home and everyone in and out of the house, I love having this as a go-to snack.  Watch out its addictive.  #junkfoodkids on Instagram when you make a junkfoodkids recipe and get featured in the weekly recipe roundup. Makes 6 servings Carbs  11.3g   Protein  8.3g 1 lb. fresh Brussel sprouts shaved Dressing 1 garlic clove grated 2/3 cup extra virgin olive oil 1/2 cup grated parmesan and asiago blend cheese 2 tbsp white champagne vinegar 1 tbsp dijon mustard 1 tbsp balsamic vinegar 1 tbsp Worcestershire sauce 1tsp lemon juice 1 tsp coconut sugar 1 tsp Italian seasoning 1/4 tsp salt 1/8 tsp ground black pepper Nuts 1 cup pecans 1 tbsp Irish butter 1/2 cayenne pepper Directions Place brussel sprouts in a bowl.  Put all the dressing ingredie

Chocolate Almond Butter

I have an Instagram friend that is completely obsessed with low carb nut butter.  She has so many flavors she posts about.  She will find one she likes and order all the flavors. I watch her show all these different kinds of nut butters and I was thinking I could make some flavors.  I make regular almond butter that is in the cookbook Food For The Family Soul. I have made a Coconut Almond that I love. Now it's time to try some with chocolate. Makes 48 Servings (1 tbsp)   Carbs 2g   Protein 1.9g 1 tbsp coconut oil 3 cups roasted almonds 1 tbsp cocoa powder 1 tsp vanilla 1/4 tsp stevia Directions  Place ingredients into a highspeed blender or food processor and blend until you get the desired consistency.  Keep in an airtight jar in the refrigerator.   Ebook Hardback

Grilled Spicy Gazpacho

I am not a huge fan of chilled soups, over the years I have come across some gazpachos that have wowed me.  One thing I love is a roasted salsa, and so I really thought a grilled gazpacho would have the same smoky effect.  I love this it's really spicy maybe because my tomato juice had siracha.  I Like to serve these as shooters, garnished with some micro greens a veggie that is on hand and I love a blackened shrimp. Makes 7 cups (per cup) Carbs  18.7g     Protein  2.3g Ingredients 2 red peppers cored and deseeded 1 yellow pepper cored and deseeded 1 orange pepper cored and deseeded 1 large yellow onion 4 large garlic cloves 2 zucchini 3 tbsp lime juice 2 tbsp white wine vinegar 1/2 tsp ground cumin 2 1/2 cups spicy tomato juice 1/2 cup water 1 tbsp tomato paste salt and pepper to taste nonstick spray Directions Set your peppers so the side.  Peel, trim and quarter onion. Place with peppers.  Leave the garlic in the natural wrapping to protect from burni

Coffee Cake

A giant CHEAT recipe! Carbs 49.5g  Protein 3.8g 9 servings You can be a star without making everything from scratch.  You guys loved the coffee cake yesterday so here it is.  Please don't laugh. I know this is so crazy easy.  It's the Half and Half that makes everyone love my coffee cake so much.  Sometimes I make a coffee cake from scratch, but really I can have this in the oven in five minutes without pulling out 10 ingredients and more clean up than I want in the morning. My carb and protein counts are based on the brand of coffee cake mix I buy.  I tagged the brand on my Instagram. Ingredients Cinnamon Crumb topping coffee cake mix as natural as possible Half and Half egg Irish butter Directions Preheat oven to 350 I bake mine using convection so the crumb topping is more crunchy.
