Valentine Fun

Tomorrow is Valentine's Day.  I am ready, are you? 

In the morning I will be up making a special breakfast I don't have time for scratch on school mornings.  However I found some great all natural orange cranberry scones I will shape into hearts and bake up in the morning.  I will prepare some potatoes into shreds for hash brown bake today. I will mix all the ingredients tonight so it is ready to pop in the oven in the morning.  Do a bit of decorating in the kitchen.  Once the kids are in bed I will put our their gifts at their place settings so while they are waiting on their hot scones and hash browns they will be opening their gifts.  

Hash Brown bake 
1 lb shredded potatoes (organic)
1cup shredded cheddar cheese
8 oz. sour cream
1/4 cup melted butter
1/4 tsp white pepper
5 dashes of hot sauce
Directions:  mix ingredients together.  Spray an 8 inch baking dish with olive oil.  Place ingredients in dish.  Bake in oven for 45-50 minutes.  

I have my husbands gift and card already to place out for him.  I love these little holidays.  Small gifts and fun. 

I may even make some chocolate strawberries if I can find some organic strawberries today.  I already tried one store but alas they did not have any.  So another great sweet fruit treat is pineapple.

This is so simple but so good.  And really pretty healthy.  Pineapple is a great aid in digestion.  

4 cups Cubed Pineapple
4 tablespoons Carmel Sauce

Directions:
Put a cup of pineapple in each dish.  So you have four servings.  Look for a store bought carmel sauce sometimes you can find an all natural one.  Warm up Sauce and Drizzle one tablespoon over each serving of pineapple.  Serve and Enjoy.

  1. you're so much more on the ball than I am. But my kids are still too young to understand what it's about (1 & 3). I did manage to make whooppee pies for dessert while baby napped.

Carmel Apple Cake

I have been craving apples and have more ideas on the horizon so stay tuned.  This cake exceeded my expectations.  And the carmel sauce got rave reviews.  The cake did not make it more than a few hours and I was thinking of making another. Ingredients for cake 3/4 cup + 1 tbsp of unbleached all purpose flour 3/4 tsp baking powder 1/8 tsp salt 3 very large organic apples, peeled, cored and chopped into 1-inch chunks 2 large eggs 3/4 cup sugar 2 tbsp Frangelico  1 tsp vanilla 6 tbs  butter, melted  Ingredients for Carmel Sauce 6 tbsp organic butter 1 tsp frangelico 1 cup sugar 1/4 cup organic milk Directions;  This cake is a couple of steps but it really is worth the extra effort.  Pre-heat oven to 350. Peel, core and chop apples into cubes. sift flour, baking powder, and salt.  with a whisk mix in melted butter until crumbly.   In a separate bowl cream eggs and sugar until slightly frothy.  Add in Frangelico and vanilla.  Mi

Taste Of Summer Salad

15 oz. bag of organic spinach 6 to 8 sliced organic strawberries 1 avocado  2 tbsp crumbled blue cheese 2 tbsp chopped pecans Dressing: 1 clove garlic 2 tsp honey 2 tsp spicy brown mustard 2 tbsp Raspberry vinegar 2 tbsp balsamic vinegar 4 tbsp olive oil Directions:  peal and remove pit of avocado.  Slice avocado and place ingredients for salad on plate.   Grate garlic and mix dressing ingredients together.  I like to put the  dressing on the side so that each person can adjust the amount they want.
