Silkology recipes and sweepstakes

I have to be honest, even though I have been working with food allergies I have never tried silk. When Silk contacted me to write about their new Silkology recipes I was so excited.  We because you know I love to eat and try new foods.  I am impressed with several of the recipes silk is calling Silkology.  After trying a few of the Silk Varieties, I found I really like the coconut milk.  I love coconut water and so Silk's Coconut Milk was a perfect fit for me.  I even found myself making up a new latte for my self using Coconut milk.

Coconut Carmel Latte
2 shots expresso
1/2 cup of warm Silk Coconut milk
1 tbsp of carmel sauce
Yum!! great way to start the day.

As I was looking at the Silkology recipes my coffee did not come to mind, however my end of the summer pool party did.  Every year we have a pool party for the kids friends and any new kids coming into our school.  The Silkology recipes are so fresh and perfect for summer that I was immediately drawn to the Pina Coloda  and Mango Lass i.  Both of these drinks have fresh fruit and work well with tropical theme.  I plan to garnish both with fresh fruit and fun drink straws with name labels for the kids. These drinks will be the perfect refreshment for the kids.  With 50% more calcium than milk, less fat than milk  and my favorite no GMO's.

You can find these recipes and more at the Silkology Facebook page.  These are great recipes you can feel good about serving at your next get together.
Silk inspired me to think outside of the bowl with their new Silkology-inspired drink recipes. Tell me something new you want to try this summer when entertaining to win a Silkology prize package.
This is a sponsored conversation written by me on behalf of Silk. The opinions and text are all mine. Official Sweepstakes Rules.

Bubble Juice

Bubble juice is so much fun my daughter loves this especially when she is not feeling well.

1 cup organic small Tapioca pearls
    Bottle of Juice.
    Really large straw

Directions: Cook tapioca according to directions. Let cool and rinse thoroughly.  In a tall clear glass put two tablespoons of tapioca and favorite Juice.  We like pomegranate and juices that are a blend of fruit and veggies. You should be able to make six to eight glasses.  Add large straw so that they get pearls with every sip.

    3/4 cups  organic sugar
    1 tablespoon organic vanilla

Spaghetti and Meatballs

When it comes to this recipe keep it simple.  This is a great fast recipe, using store bought meatballs.  We are so busy these days that few of us have time to make homemade meatball I can post a homemade recipe later, but this recipe is for families on the go.

2 Cans organic diced tomatoes
2 lbs cooked hormone and antibiotic free turkey meatballs
2 Bay leaves
1 1/2 teaspoon dried organic basil
1 teaspoon organic garlic powder
1 teaspoon organic  sugar
1/2 teaspoon  sea salt
1 lb spaghetti noodles with protein and omega-3
1 tablespoon organic olive oil

Directions:  puree the tomatoes, mix ingredients together (except for noodles) and place in crock pot or slow cooker with meatballs.  Put sauce on low and cook for 2 to 3 hours.  You can get this together before you go to pick up the kids and when you are done with after school activities dinner is almost too.  Cook pasta according to directions.  Put a salad together while noodles cook and dinner is served.  This is my families favorite red sauce.  Hope your family likes it as well.  Remember kids like simple.  oh yeah don’t eat the bay leaves.

White Wine Chicken

3 boneless skinless chicken breast
4 ounce prosciutto
salt and white  pepper to taste
1/2 cup of wine
1/4 of a medium yellow onion
1/2 cup of milk
1 teaspoon of flour
one box of penne pasta
Directions:  cook this in a crock pot.
Put the chicken in the crock pot, cut up the prosciutto and add.    Puree the onion and use some of the wine to get it smooth (so the kids don’t see the onion) add rest of wine, puree, salt and white pepper to chicken and cook 6 hours on low. Remove and  shred chicken. Boil penne to al dente.   Add milk and flour to sauce left in crock pot. Mix with a whisk.  Return chicken and put over pasta.
